[Tips on making awesome mashed potatoes]
1) Use starchy potatoes.
We use russets which end up really fluffy when mashed. If you use a waxy potato instead, it’s highly likely that you’ll end up with a gummy, gluey texture.
2) Avoid water as much as possible.
The best is to bake the potatoes in tin foil. If you choose to boil them, then be sure to drain the water thoroughly once they are cooked. After draining, put them back into the pot, covered, for about 15mins. This allows the residual heat to dry out the potatoes.
3) Use a ricer or a fork to mash the potatoes.
Never ever use a food processor. When potatoes are mashed too vigorously, they release starch which results in a gluey, pasty texture. (Same goes if they are overcooked)
4) Add warm ingredients.
Make sure the milk/cream and butter are warm when added to the potatoes, else the mashed potatoes will turn out lumpy.
5) Be creative with flavours.
We add grated nutmeg into our mash. Play around with different ingredients, bearing in mind what you’re pairing the mash with. If pairing with fish, lemon zest + parsley + capers + sour cream might be a good addition!
