The reason why the trending Burnt Basque Cheesecake tastes good is the same reason why desserts like creme brulee taste good. It's about the contrast; where the bitter-sweet charred bits meet the sweet, creamy, savory cheesy parts, and the layer of oozy "custard" in the middle melts into the smooth cheesecake in your mouth. They call it the anti-cheesecake because there's no crust, no base and you UNDERBAKED it at a higher temperature WITHOUT a water bath to intentionally crack and burn it. A slice of classic New York Cheesecake would say, "am I a joke to you?" . The version ($7.50/slice) offered at @TheKinsCafe is about as legitimate as they come by in the looks department. It has that attractive deep brown, darkened top and gratifying layers, with a creamy center that drools and puddles. Top points for its texture too. . Flavour-wise, it was heavy, but not particularly rich or complex. It could do with more depth and tang, this was more double cream than it was cheesy. And it was sweet too, almost tipping the cloying-o-meter. Maybe extra charred bits would help to "balance" the sweetness, but what would my doctor say? Then again, it's priced moderately at $7.50 a slice.
