Giant panda Po gave birth to a pair of twin baby pandas on July 6, 2019 at the Chengdu Research Base of Giant Panda Breeding. The elder brother weighed 211.6 grams and the younger sister weighed 209 grams. The duo are by far the world’s heaviest newborn captive mixed-sex giant panda twins; a newborn giant panda cub weighs averagely around 150 grams.

Chili oil dumplings - '红油抄手', anyone?
Wishing you a great Saturday, friends. Sharing a popular & mouthwatering Sichuan dumpling dish that's drowned in a pool of vinegary spicy sauce. If you know me, you know I love dumpling, one of the easiest way to pack in lots of veggies & pleating them is very meditative to me.
Recipe (yields 30-40 dumplings)
Ingredients:
~ 1 package wonton wrapper, thaw at room temperature (check my IGTV for few pleating ways)
~ 3 cups Napa/Chinese cabbage/bok choy
~ chopped: 1 carrot, 6-8 caps soften shiitake/black mushrooms, 3/4 cup tofu (used local fried tofu/pan fry 8oz firm tofu & season with salt), 1/2 cup mung bean sprouts (optional)
~ 1 bunch of mung bean thread, soaked in hot water until soft, cut into fine shred
~ 3 tsp soy sauce/tamari, 2 tsp grated fresh ginger, sesame oil, oil, white pepper & salt to taste, & handful of chopped scallions
Chili oi sauce (adjust based on # of dumplings) - 6 tablespoons light soy sauce/tamari, 1.5 tablespoons black vinegar, 4 teaspoons chili oil crisp, 4 teaspoons toasted sesame oil, 1 teaspoon crispy minced garlic, dash of white pepper
✔️ Place julienned Napa cabbage/bok choy in a large bowl & gently massage it with 1 teaspoon of salt. Set aside for 10-15 minutes. Meanwhile, in a heated pan with 3 tsp oil, sauté mushrooms until fragrant, add in carrot, tofu, ginger & stir continuously for 1-2 minutes. Drizzle some sesame oil, soy sauce/tamari, & cook until mixture is coated with sauce. Turn off heat, add chopped mung bean sprouts (if using), & season with salt & white pepper.
Using a cheesecloth or with your palms, squeeze out all liquid from the Napa cabbage/bok choy. Add squeezed veggies, tofu mixture, mung bean threads, chopped scallions in a bowl & mix until well combined. Season with white pepper, sesame oil & salt, if needed.
✔️Bring a pot of water to boil, slowly add dumplings in and let cook for few minutes (cooking time depending on the type of wrapper). Scoop dumpling up when they float up or when wrapper turns translucent. Serve warm with chili oil sauce and garnish. Enjoy and have a great weekend, all
