2 cups BBQ sauce (570 g)
¼ cup brown sugar (55 g)
4 tablespoons apple cider vinegar
3 teaspoons dried oregano
1 teaspoon Worcestershire sauce

1 tablespoon chili powder
3 lb baby back pork rib (1.3 kg)
salt, to taste

Slow Cooker Honey Garlic Chicken & Potatoes
Ingredients
2 lbs chicken (any cut, SEE BLOG POST)
1 lb potatoes, chopped (I use baby red & yellow)
2 bell peppers, chopped (I used green & red)
1 large onion, chopped
2 tbsp oil (for IP)
SAUCE:
1/2 cup honey
1/2 cup low-sodium soy sauce or coconut aminos
2 tbsp ketchup
2 tbsp sriracha
3–4 garlic cloves, minced
1 tsp dried parsley
Salt & pepper to taste
Instructions
Slow Cooker
Add potatoes, bell pepper, and onion to the bottom of the slow cooker. Add chicken on top. In a small bowl, whisk together sauce ingredients until well combined. Pour sauce on top of chicken and potatoes. Cook HIGH 2-4 hours or LOW 4-6.
Instant Pot
Turn on the IP and select saute. Once hot add oil to the pot. Add the chicken, skin side down and cook a 3-5 few minutes on each side (or until nicely browned). Add bell peppers and onion on top of chicken and then add the potatoes on top. Do not stir. In a small bowl, mix together sauce ingredients. Pour sauce into the pressure cooker. Close lid and seal valve. Set high pressure for 8 minutes. Natural release for 5 minutes then quick release remaining pressure.

Ingredients:
Crust
* 1/2 cup almond meal
* 2 tbsp butter
Cheesecake
* 8 oz. cream cheese
* 1 large egg
* 1/2 tsp vanilla extract
* 1/2 tsp lemon juice
* 1 pinch salt
* 1/4 cup sweetener of your choice
Instructions:
1. Preheat the oven to 350°F. To make the crust, melt some butter until liquid and mix in your almond meal until you have some that feels like crumbly play dough.
2. Take about a teaspoon at a time and press the dough into the bottom of a muffin tin. Tip: line your pan with cupcake liners for easy removal. Cheesecake is very soft and if hard to scoop out without causing damage! Bake these crusts for about 5 minutes. They’ll come out slightly brown and crispy.
3. Then take your room temperature cream cheese and beat it with an electric hand mixer or standing mixer until creamy. Then add vanilla extract, lemon, an egg and your sugar substitute, erythritol in our case. Beat until all combined.
4. Use an ice cream scooper to fill all the crust-bottomed muffin tin cups evenly almost to the top (the mini cheesecakes will rise while in the oven but will flatten while refrigerating). You can also line each cup with a cupcake liner to make removing the mini cheesecakes easier.
5. Bake at 350°F for about 15 minutes. The mini cheesecakes should be slightly jiggly. Let them cool in the refrigerator for ideally 24 hours. But if you’re strapped for time, try putting them in the freezer for as long as you can.
6. Once the mini cheesecakes are done cooling, slide a knife around the edges of each muffin cup to loosen them up. Then use a fork and your hands to help them out cleanly. As a delicious bonus, slice up some strawberries and arrange them however you like on top of the mini cheesecakes.

1 pound macaroni elbows, uncooked (I used @barillaus)
16 ounces cheese, shredded (I used all cheddar)
5 cups milk of your choice (I used almond milk)
1 tbsp butter or ghee (or more if you want)
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/8 tsp onion powder
Instructions
Add all ingredients to the slow cooker. Stir to mix well. Cook HIGH 1-2 hours or LOW 2-3.

Ingredients
2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
2 ripe avocados, pitted and diced
(Skip the Corn when Keto)
¼ cup red or green onion, minced
2 tablespoons cilantro, minced (or parsley or dill)
2 tablespoons lime (or lemon) juice
2 tablespoons olive oil
salt and pepper to taste

Instructions
In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.
Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.

Notes: additional add-ins that go well with this salad include chopped tomato, chopped cucumber, bacon chopped and cooked, or black beans.

Instant Pot Bangers & Mash (Low-Carb, Paleo, Whole30)
16 ounces bangers aka sausages
1 onion, sliced
2 tsp oil (for IP)
2 cups low-sodium beef broth
1 tsp thyme
1/2 tsp salt
1/2 tsp garlic powder
Slurry: 3 tbsp @bobsredmill Arrowroot flour, 6 tbsp water
Instant Pot - Set Instant Pot to the high saute setting. Heat oil. Add sausage and brown on each side, 3-5 minutes. Remove sausage from IP. You might have to brown them in batches. Add onion and saute a few minutes until soft. Add the beef broth, and using a wooden spoon, scrape the bottom of the Instant Pot to remove any bits that stuck to it. Make sure you scrape it well to avoid burning during cooking. Stir in thyme, salt, pepper, and garlic powder. Close and seal vent. Select manual setting and set time for 5 minutes. Quick-release pressure when cook time is completed. Add trivet and cauliflower in steamer. Can additional 3 minutes on high pressure, quick release pressure when done. *If you’re not cooking the cauliflower in the pressure cooker, set the time for 8 minutes on high pressure & quick release.** Remove sausages and cauliflower from pressure cooker. In a small bowl mix together slurry.

Slow Cooker/Instant Pot Garlic Parmesan Chicken & Potatoes
Ingredients
2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces (I used @butcher_box)
1 lb red potatoes, chopped
1/2 cup grated Parmesan cheese
1 cup shredded Parmesan cheese
2 garlic cloves, minced
1 tbsp garlic powder
1 tbsp Italian seasoning
1 tbsp extra-virgin olive oil (I used @kasandrinos)
Salt & pepper to taste
3/4 cup low-sodium chicken broth (for IP)
2 tsp oil (for IP)
Instructions
Slow Cooker
Add all ingredients EXCEPT the shredded Parmesan cheese to the slow cooker. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6. Top with shredded Parmesan cheese and cook an additional 10-20 minutes until melted.
Instant Pot
Turn the Instant Pot to saute. Once the IP is hot, add the oil & chicken and cook a few minutes on each side until slightly browned. Add potatoes and all other ingredients EXCEPT the shredded Parmesan. Be sure to include the chicken broth. Stir to mix well. Close lid and seal valve. Set high pressure and cook for 8 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). Quick release pressure. Top with shredded Parmesan cheese. Cook on WARM until cheese is melted.
