Happy Easter everybody! We made a real Easter dish today. We found some Austrian ‘Karree-steaks’ and wrapped them with bacon, rubbed them with Fast & Flavoured from @norubbish_nl and grilled them to perfection. To complete the dish we grilled green asparagus and served them with a ‘sauce’ of poached egg. Now if that doesn’t give you a real Easter feeling?!

It tells a little bit about our story, what meat we’ll be using, and some specialty items we will be serving on our 8th Ave spot.

Why do we chose Wagyu?
.
First, I believe when you’re truly passionate about something you want to give your customers the best product you can find. This means sourcing and finding the best product you can, which has taken years of planning and hard work. We have been testing and trying different product since our food trailer back in 2015.
.
Second, to put it simple Wagyu beef is a highly marbled piece of meat. It’s really in a category of it’s own for tenderness and flavor. The fat within becomes a rendered buttery flavor of greatness; These are the smaller flecks of fat that you want in a piece of meat, not the large chunks that don’t melt away. Not only that but due to the high marbled fat content in Wagyu it contains much more amount of monounsaturated fat than normal beef which means more Omega 3, 6, and 9. It contains the lower cholesterol levels, and oleic acid, considered good for your heart. It’s healthier.

Every piece of beef we use will be Wagyu. This includes Brisket, Handmade 100% Beef Wagyu Sausage, and Beef Ribs. We’re also going to be doing special items on the weekends such as our Smoked Meatloaf.
