When you get towards the end of the week and the cupboards are bare, isn’t it just so great that you can make something as delish and QUICK as this one pot chicken ramen noodles using whatever random veggies you have in the bottom of the your fridge

Quick Asian Chicken and Veg Ramen Noodles | Serves 3
.
2 packets instant noodles or ramen , discard seasoning**
1 tbsp oil, 2 garlic cloves minced, 1/2 onion sliced, 200 g/7 oz chicken thighs chopped
1 carrot cut into matchsticks, 1 capsicum / bell pepper sliced, 2 cups finely shredded cabbage
1 1/4 cups (215 ml) water, plus more as needed
Sauce - MIX: 1 tbsp dark soy sauce, 1 tbsp Oyster sauce (or Hoisin), 2 tsp Hoisin sauce (or more Oyster sauce), 1 tbsp Mirin, Chinese cooking wine or dry sherry *
Garnishes (optional): Finely sliced green onion / shallots

1. Heat oil in a large skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until starting to go golden.
2. Add chicken and cook, until it mostly changes from pink to light brown. Add Sauce and cook for 1 minute, add carrot and capsicum, cook 1.5 minutes.
3. Push chicken and veg to the side to make enough space for the noodles. Add water, place noodles in water.
4. Leave for 45 seconds then turn. Leave for 30 seconds, then untangle the noodles, then toss through the chicken.
5. Add cabbage, toss for 1 minute until sauce reduces to coat the noodles and the noodles are cooked. Noodles should only be in pan for the cook time per directions on packet (2 to 3 minutes).
6. Serve immediately, garnished with green onions.

* If you can’t consume alcohol, skip this and instead of using water, use ½ cup water + ¾ cup chicken broth LOW SODIUM

BANANA MUFFINS
I know it’s not Monday but this long weekend has me thinking it is , so here’s a healthy snack recipe to start the week. For babies, you can substitute the honey for maple syrup or agave ❤️. This is one snack I feel great giving to my kids , check our the ingredients .
• INGREDIENTS:
-1 1/2 cup whole wheat flour -1 teaspoon baking soda
-1/4 teaspoon salt
-4 medium bananas
-1/2 cup nonfat plain greek yogurt
-3oz honey
-1 egg
-1 tablespoon vanilla extract
-1 tablespoon olive oil
-Handful chocolate chips
-Non-stick cooking spray
INSTRUCTIONS:
♨️Preheat oven to 350 degrees F.
1️⃣Add bananas, yogurt, honey, egg, vanilla and oil to a blender. Mix on high until smooth.
2️⃣Add flour, baking soda and salt. Blend well.
3️⃣Slowly add in chocolate chips.
4️⃣Spray the muffin trey with non-stick cooking spray.
5️⃣Add the batter evenly to the muffin trey (fill each container about 3/4 of the way)
6️⃣Cook for about 15 minutes or until toothpick comes out clean
Cool for about 15 minutes. They are most delicious when they are warm!
This recipe makes 24 mini muffins or 12 regular size muffins.

I don’t snack much, but when I do it usually looks something like this. Nate and I love to make big plates of sliced veggies, hummus and @simplemills crackers when we’re hanging out/watching Netflix. I feel best when I fill up on veggies first. They taste so good dipped in @majesticgarlic sprouted hummus (the only hummus that never upsets my stomach). Fresh crunchy veggies are best for dipping.
