[ CONCLUDIAMO IN CHAMPAGNE ] L'idea di finire la serata del Sabato con bottiglia particolare di champagne è venuta all'amico Andrea, titolare dell'enoteca Gola e Cantina di Massa (@golaecantina). Scegliere dal frigo questa bottiglia non è casuale, perché entrambi siamo curiosi di capire come sia. Per prima cosa è uno champagne 100% Meunier, poi è un Extrabrut ( come piace a me e Andrea ), dell'annata 2010 e con sboccatura al 16 Marzo 2016! Ottimo! Ultima cosa da dire è il produttore, Lelarge Pugeot (@champagnelelargepugeot), famigliare azienda biodinamica di Vrigny, non molto distante da Reims. Mi piace subito perché é rustico e mai inserito nei binari di un'eleganza olfattiva che non cerca, ma a cui vorrebbe arrivare con la sua trama tipica da uva Meunier. È ampio, evoluto, cremoso, quasi candito nel ricordo fruttato, tostato e con ricordi finemente fumé, poi ha quella minima spinta dolce che mi ricorda la crema al limone appena cotta! In bocca la bollicina è morbida, spumosa e davvero avvolgente, ma senza far perdere il contatto con la retta via su cui cammina questo champagne: una tensione acida e citrina ancora viva e persistente. L'acidità non lascia sola la bocca, pur dentro i vasti confini di una sapidità che mi lascia colpito. La sua evoluzione la ritrovo nelle movenze integre e di lunghezza di gusto che rapiscono la bocca. È uno champagne a tratti ruvido e tignoso, ma al tempo stesso lascia l'impressione di eleganza grazie alla sua cremosa e sapida bevuta, che stupisce per densità e potenza. Bello, strano, piacevole e mai scontato.
