Loaded curried omelet + avocado on a flax cracker.

Gonna be a super busy Sunday and I got an early start this morning. Kinda feels like a Monday.
.
Believe it or not… this is actually the first time I feel I got an omelet right. I usually just dump the veggies in and scramble it because I can’t manage to get the flip right. Making progress though!
.
Here’s how I made it:
.
1.Finely diced up leftover veggies. I had some jalapeno peppers, red peppers, red onion, and mushrooms left in the fridge that I diced up.
.
2.Hand whisked 2 large eggs with about 1 tablespoon coconut cream and 1.5 tablespoons curry powder. I like adding a touch of coconut milk or cream and curry for better flavor. You can leave out the curry if you want a more traditional omelet.
.
3.Put a pan on medium heat, melted about 1/2 tablespoon butter. Then added the veggies and stirred them for a minute or two. Added some sea salt and pepper to taste.
.
4.Pour the whisked egg mixture on top of the veggies and after a few seconds, gently push cooked portion from the edge toward the center and tilt the uncooked eggs towards the hot pan surface.
.
5.When the eggs seems almost fully cooked through (no liquid), add cheese or more fillings. I added 1/4 cup of shredded white cheddar. Then fold in half and put on a plate. I added 1 tablespoon of sour cream, jalapeno, and some hot sauce for an extra kick.

Then served this up with an avocado on top of a flax cracker.

I came to the beautiful realization this morning that you can make lunch into brunch by simply adding an egg to any dish. With this logic in mind, I heated up some of @hummusapien’s enchiladas that I prepped for lunches throughout the school week and topped them off with an egg for my own fancy Sunday brunch chez moi. Now I’ve got @thenakdkitchen’s peanut butter blondies in the oven to complete the experience. Ahhhh life’s simplest pleasures
