Braised beef noodle soup

We’ve done Beef noodle soup recipes on Instagram for 3 times and every time they’re not exactly the same (slightly different with this and that). To be honest we love all 3 of them and can’t make our minds which one is the best. They’re all so good! And then I think it might be because of in Thai recipes they don’t have to be exact measurements every time we cook. Especially noodle soup. We’re more likely to add some condiments; fish sauce, sugar, vinegar and chili flakes (chili oil too) in our noodles anyway
To make this, you’ll need;
- 2-3 lbs Chuck roast
- 1 onion
- 3 stalks celery
- 5-6 cloves garlic
- 1 cinnamon stick
- A bunch of cilantro root/stem
- 2 star anise
- 2 Tbsp ginger
- 1 tsp coriander seed
- 1 Tbsp galangal
Seasoning;
- 1 Tbsp soy sauce
- 3 Tbsp seasoning sauce
- 1 Tbsp dark sweet soy sauce
- 1 tsp salt
- 1 tsp white pepper
- 2 tsp beef bouillon
- 10-12 cups water

You’ll need;
- 1 lb (450 grams) fresh flat rice noodles or 200 grams dried XL noodles, soaked
- 4 oz beef,sliced
- A bunch of Chinese broccoli or any Asian greens (we used yu choy this time), cut
- 2 eggs
- 2-3 cloves garlic, chopped
- 2 Tbsp oyster sauce
- 4 tsp dark sweet soy sauce (add more if you prefer darker color)
- 1 tsp seasoning sauce
- 1/2 tsp fish sauce
- 2 tsp sugar or to taste
- 1/4 white pepper **Condiments; chili flakes, chopped chili +vinegar, sugar and fish sauce**
