Happy weekend!! I’ve had so much Thai food growing up in #kunming to the point that I don´t really have to look for recipes to get the flavours I wanted. The recipes today are focusing on to make use of all parts of your ingredients and turn them into delicious dishes:

You need: for the marinate
- 5 Long red chilli
- 4 Thai chilli
- 4 cherry tomato
- Some dried red chilli
- Fresh green pepper or black pepper
- 5 cloves garlic
- 3 Fresh lemon grass, chopped
- 1/4 Red onion, sliced
- 3 Pieces fresh turmeric, sliced
- 1 small/medium size ginger, sliced
- 2 Spoons oyster sauce
- 2 Spoons fish sauce
- 2 Spoons soy sauce
- 100ml Coconut milk
- 1 Lime

To prepare:
- Grill all types of chilies, cherry tomato, garlic and fresh pepper on a frying pan on medium heat until tomato blister and chilies turn black.
- Meal while, place lemon grass, red onion, fish sauce, turmeric, ginger, oyster sauce and soy sauce in a blender.
- Add roasted ingredients, add coconut milk and 1 lime. Pause 3 times and blend until finely.

To grill the chicken:(app.1.3 kg)
- Marinate the whole chicken for at least 8 hours.
- Take chicken out 1 hour before grilling.
- Grill 225 degrees 20 minutes then turn down to 185 degrees, grill for at least 70 minutes.
- Let chicken rest for 25 minutes before cutting.
- Keep the stock in grill pan and chicken bone to make a chicken stock.

To make Yellow curry:
- Keep the marinate, use a stock pot, heat up the marinate with 1 spoon coconut oil, until the flavours coming out.
- Add cumin powder, curry powder, coriander powder, salt, white pepper, one box coconut milk, water. Simmer 5 minutes. Taste and adjust with water.
- Pour the stock over through a strainer, yellow curry is ready.

To Make chicken stock:
- Fry chicken bones with left over stock and one spoon oil. Add hot water to cover, simmer 20 minutes. Freeze if needed.
