Happy pancake Sunday! It’s been a while since I made pancakes on Sunday especially as I tend to have them quite frequently during the week but I thought I would make these a colourful batch today. 100g plain flour 200ml almond milk 1 tsp baking powder 1 tbs sweetener of choice I split the batter into two portions and coloured them each with @rawnice blue spirulina powder and pink pitaya powder (15% off the powders with my code “wellfitfoodie15” at the link in my bio) It’s such a lovely sunny day today, what are you guys up to this Sunday?

Let's Monday the right way Wake up early, have your coffee just how you like it, be productive, work but also relax, cook something easy and delish, eat meatless and enjoy every bit of your day! #meatlessmonday ♥︎  Easy Veggie Fried Rice makes 4 servings ☝️ INGREDIENTS: 2 1/2 cups jasmine rice cooked and chilled 3 eggs whisked 2 1/2 Tbsp sesame oil divided 1 red onion diced 1 Cup (60g) Mushroom mix chopped if needed 1 red bell pepper diced 1 1/2 cup broccoli florets cut into bite-sized pieces 1 cup frozen peas 1/2 cup Cashews whole and raw 1 Tbs Fresh garlic grated 1 Tbs Fresh ginger grated 2 Tbsp soy sauce a small bunch of fresh basil chopped 2-3 scallions sliced thinly 2 Tbsp sesame seeds INSTRUCTIONS: Heat 2 Tbsp of oil in a large skillet over medium-high heat.  Add the onions and mushrooms in, and sautee them for 2-3 minutes. Then, add in bell peppers, broccoli, and peas, and cook for about 4 minutes more. Add cashew, garlic, ginger and cook for an additional 1-2 minutes until fragrant. Pour in the soy sauce, stir and let it simmer for a couple of minutes. Push the veggies to the sides of the wok, clearing a space in the middle in which you need to add the remaining 1/2 Tbsp of oil.  Add in the whisked eggs and use a wooden spoon to scramble them, breaking them up into small bits. Toss the egg and veggies together. Add the cooked jasmine rice and continue to toss and stir until well combined (about 2-3 minutes). Taste and season with salt and pepper, if needed (to your taste). Blue spirulina vegan waffles? Why not! Y’all know how I like to play with colours in my food. This was a simple vegan waffle recipe and I added 2 tsps of @rawnice blue spirulina powder to give it that gorgeous colour. Can I just mention that blue spirulina flavour is quite mild so you don’t really taste it in the waffles but you get all the amazing benefits that come from its nutrients. Recipe below Incase anyone’s interested... 1 cup plain flour 2 tsp baking powder 1/4 tsp Salt 3 tbs coconut sugar 1 cup almond milk 2 tbs coconut oil 1 tsp vanilla extract 1/2 tsp cider vinegar 2 tsp blue spirulina powder (optional) Mix all dry ingredients together Mix all wet ingredients together and then mix into dry ingredients Pour into a waffle mould and bake until an inserted toothpick comes out clean. Enjoy!

I just submitted the second round of edits to my publisher... so I’m feeling *quite* accomplished right now! But more importantly, last night I made the roasted tomato sauce from @alisoneroman Dining In, and I gotta say, it was pretty fantastic. It’s also INTENSE, as in packed, packed with umami richness from the anchovies, caramelized red onions and roasted tomatoes. I paired it with some slick paccheri, so the tomato bits could hang out inside the big hole. Hey guys, do you know my friend Michele, over at @mangiawithmichele? Znacie FARSZYNKI? To takie "spacjalne" kotlety ziemniaczane Te oryginalne pochodzą z Warmii, robi się je z mięsno-jajecznym farszem. Poznałam je, gdy byłam jeszcze na studiach. Pierwszy raz jadłam je u koleżanki, która przywiozła te kotleciki jako prowiant od rodziców z weekendowej wizyty tak mi zasmakowały, że poprosiłam o przepis i do tej pory robię je tak, jak właśnie mnie nauczono. Mój przepis nie pochodzi z Warmii, a z północno-wschodniej Polski. . . *Z tej ilości wychodzi ok. 18 sztuk. . Farsz: mięso mielone - ❗dobrej jakości! NIE z supermarketowej lodówki! Trzeba zmielić je samemu albo w sklepie mięsnym!❗ ok. 0,5kg (u mnie szynka) przesmażyć z zezłoconą cebulą, doprawić solą, pieprzem i czosnkiem. Dzisiaj dodałam też trochę tymianku. Odstawić.1kg ziemniaków ugotować i potłuc. Dodać do ziemniaków całe jajko, sól, 1 szklankę mąki pszennej i 1 szklankę mąki ziemniaczanej Wszystko porządnie zagnieść, zrobić gruby wałek. Odkrajać niewielkie plastry, rozpłaszczyć na dłoni i nadziać farszem. Skleić. Nadać im porządany kształt (prostokąt, koło) Placuszki smażyć na oleju, na małym ogniu do zrumienienia. Porządnie odsączyć na papierze z nadmiaru tłuszczu. . . ❗Podałam je z sosem pieczarkowym i sałatką z sałaty rzymskiej, szpinaku, rzodkiewki, ogórka oraz sosem winegret. . .
