320g all-purpose flour (about 2 1/4 cups)
1 teaspoon kosher salt
160 grams room temperature water (about 3/4 cup)
For Cooking Noodles
4 quarts water
2 tablespoons sea salt
sesame oil (to keep noodles from sticking together)

Okay, I‘m just gonna say it. We’re almost 99% sure that it‘s a girl. It really is supposed to be a suprise baby, but not gonna lie, when I found out I was pregnant, I somehow ended up on the gender prediction sites. I thought they weren’t true anyways, so why not just do them for fun. But then I came across the chinese and mayan calendar which can also predict the baby’s gender and both of them said that it would be a girl!! I swear, I really thought that doing these gender predictions for fun wouldn’t affect me but they did!! I now truly believe that my baby is a girl. Hahaha and so does Ali (after I told him about it) But that wasn’t the only hint we got, my midwife told me that my baby’s heartbeat is fast and from her experience girls have always had a faster heartbeat than boys... And lastly, my uncle also made me do one of his prediction games where I had to sit on an either covered fork or spoon. (I didn’t know which one was which) but I ended up sitting on the fork, which up to him means that it is 100% a girl. Haha Let’s just say we’re sold now that this baby is a little girl. But then again.. nothing is 100% confirmed and we might all just be totally wrong and this whole time I’m actually carrying a boy. Anyway, for any future mom’s NOT wanting to find out the baby’s gender, don’t do any gender prediction games!! You will start to believe them hahaha.

SUN DRIED TOMATO CREAMED MUSHROOMS! by @alexafuelednaturally Recipe: 1/2 cup raw cashews
2 cups filtered water
16 ounces cremini mushrooms
1 tbsp avocado oil
1 tbsp vegan butter
2 tbsp nutritional yeast
2 tbsp tomato paste
5-7 sundried tomatoes, sliced
1 tsp garlic powder
1/2 tsp Salt
1/4 tsp Pepper
To serve:
Brown or white rice
Cilantro or fresh herbs
Directions:
1. To a large pan over medium heat add 1 tbsp avocado oil or oil of choice. Add mushrooms and sauté for 5 minutes, season with salt and pepper.... then add 1 tbsp vegan butter and sauté for an additional 5 minutes.
2. In a blender combine raw cashews (no you don’t have to soak cashews ) and filtered water. Blend on high until smooth and creamy. Takes 1-2 minutes.
3. Pour the cashew milk over mushrooms, then add nutritional yeast, garlic powder, tomato paste, chopped sun dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens. Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.
4. Serve with rice, top with fresh herbs.

️ Spicy steamed dumplings! by @woon.heng Recipe:
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon Chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar
Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.
Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, starch, combine well & season if needed.
Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.
