Cabuches are edible flower buds that taste like tiny artichokes and look like colorful asparagus tips. They grow on biznaga cacti in the deserts of Mexico between Coahuila and San Luís Potosí, and can be harvested for a short window of time in late March and early April just before they bloom. Ahhhh a throwback to my first ever Laetiporus sulphureus (aka chicken of the woods) from a few years ago. Ohhh how I squeaked when we came across these on a portage trail while canoe tripping in Quebec. I'd been reading about these lemony-chicken-flavoured guys in guide books for a while but had yet to find or try any. We cooked it up half on its own over the fire to sample its true flavour. The other half ended up in a Dutch oven camp pizza. Up until this point I was a bit of a mycophobe of eating wild s. But oh how the tables have turned since then... and life is that much better for it!
Grateful for all the edible flowers that the spring rains bring. Nettle season is upon us At this time of year, I love to add nettles to just about anything. From steaming them to powdering them, nettles can be used in soups, quiches, teas, pesto & so much more. Featured here is a delicious nettle latté. • 1 tsp nettle powder • 1.5 cups nut milk
• honey or maple syrup to taste
Simmer milk and nettle powder on low for a few minutes. Strain milk, froth it, add sweetener & enjoy! It tastes just like matcha
