Can I just tell you how giddy and proud I am of all you out there, taking a crack at making your own soursough?! I'm receiving more and more beautiful bread stories every day. And beautiful doesn't = perfect! (Most of our loaves are NOT this pretty... for the record) What is beautiful is that you're having fun, trying something new, and nourishing yourself with femented homemade foods. Period. Here’s the result of the last post. I normally finish these kind of flatbreads off over an open flame, but couldn’t be bothered here, so I finished it off in the pan. I ate it with a prawn, mango and avocado salsa.
What feels like about a billion of you asked for the recipe for it, so here you go: 40% young leaven, 20% spelt, 80% strong white flour, 50% water, 10% olive oil, 2.5% salt. Hand kneaded for 10 mins. Let proof at ambient temp overnight for around 12 hours (cold-ish day), preshaped, let proof about two hours longer. Lightly stretched. Cooked at high heat in a dry frying pan, followed by the other side once the bottom was done. Brushed with melted butter.

If you're an OCD perfectionist like me and notice that I forgot to do 2 of the last lines to make it symmetric, ignore it that's the joys of getting interrupted by kids...I wouldn't have it any other way. Quick Specs: *vegan* toasted oats porridge, using vegan butter and oat milk! 20% porridge, 10% white whole wheat, 5% whole grain rye, 80% hydration, 2% sea salt Stencil tips: spritz dough very lightly with a fine water mist & brush using a pastry brush; work slowly, small sections at a time; apply your stencil, then a layer of all-purpose flour and rub lightly with finger until the stencil is complete; carefully remove stencil, slash, bake as usual

夕方まで爆睡しちゃう高齢犬。

誰もいないって楽ちんだね〜
昼寝も堂々としちゃったり
そう言えば
自分用にドーナツ生地を
発酵させてたんだ!って
慌てて飛び起きて
揚げたのがこちら( ;∀;)
