Khorasan is an ancient wheat variety that is very high in protein at almost 15%. The flour is yellow in colour and has the most incredible strength and flavour. French toast can be just as good savory as it is sweet. #ad This savory garlic Parmesan French toast is one of my favorite ways to have it. To make two slices of this savory Parmesan French Toast add one large egg, 1/2 cup milk, 1/2 cup grated Parmesan cheese, handful chopped fresh parsley, 1/2 tsp. garlic powder, 1/2 tsp. sea salt and 1/4 tsp. ground black pepper to a shallow bowl. Fully blend all ingredients with a fork scraping any excess from the sides of the bowl. Dip each slice into the egg mixture fully saturating each slice and spread remaining cheese and egg mixture on each side of of bread. Add 1-2 tablespoons of butter to a skillet. Heat until bubbly. Add the soaked bread to the skillet, adjust heat to medium and cook on each side until golden brown. 3-4 minutes. Double up ingredients for 4 slices. It was so darn good. #AngelicBakehouse
I also made some more Uzbeki flatbreads with my new spelt starter, and my new stamps, and once again, they were so good! The yoghurt in the dough plus the mix of flours made them so tasty.
This dough was made of:
100g wholemeal spelt starter
250g thick Greek yoghurt
150g @mrsmiddletonoil plain natural flour
100g @cotswoldflour white spelt flour
20g olive oil
1tsp salt
Mixed and made using my master recipe process then after the overnight prove, I turned the dough out onto the counter, cut it into portions & made them into rounds; I then pressed the middles down with a spoon and pushed out the edges of the dough to create the flattened middle and ridged edges; I dipped the stamps into water before pressing into the dough and pulling straight back up again.
Baked for 20 minutes at 200C fan.
Eaten immediately
