happy friday! this simple home-style chinese dish is saucy and oh so flavorful, absolutely divine served over steamed rice with some veggies. if you’ve never made braised tofu before I promise it’s radical and will change your view on tofu. go make it this weekend! you can thank me later . EDIT: just uploaded how to cook this in my stories! . Braised Tofu with Shiitake Mushrooms (焖豆腐) 1 14 oz block extra-firm tofu (pressed* and cut into 1/2-inch thick slices) 3 tbsp cooking oil 3 garlic cloves, minced 2 scallions, sliced into 1 inch pieces 4-5 fresh shiitake mushrooms, sliced 1/4 cup red bell pepper, sliced finely 3 dried chilies, cut in half and de-seeded 2 tbsp light soy sauce 2 tsp dark soy sauce 1 1/2 tbsp vegetarian stir-fry sauce* 1/2 tbsp shaoxing wine (sub rice wine/dry sherry) 1 tbsp sugar 3/4 cup water . Heat oil in a frying pan and fry tofu pieces until both sides are golden brown. Remove from pan. Heat oil in the same pan and add minced garlic, scallion, and chiles, frying until fragrant. Add bell pepper and mushroom slices and stir-fry for 2 more minutes. Whisk together soy sauce, stir-fry sauce, wine, and sugar in a separate bowl, then pour into the pan along with the water. Once this mixture has reached a boil, add previously fried tofu to the pan, reduce heat, and simmer for 5-6 minutes, until sauce is reduced and thickened. Season with salt, if needed. Garnish with chopped scallions and serve hot with rice. *To press tofu: wrap tofu block in paper towels or a kitchen towel, place a cutting board over it and set a heavy object on top for at least 20 minutes to press out the water. This ensures the tofu will crisp up when frying. *Any kind of vegetarian oyster sauce or mushroom stir-fry sauce will work.

MARVELOUS APRICOT ALMOND CAKE ⠀ САМЫЙ АБРИКОСОВЫЙ ПИРОГ Да вот же он! Третий подряд зараза:) Влажный, пахнет миндалем, ванилью и детством. Хочется сразу уииии и к бабушке в деревню — сшибать палкой крапиву ⠀ Выбирайте пост на завтра и давайте скорее печь! Почему еда в этом блоге именно такая? Что мы себе думаем вообще? про счастье:) ⠀ БЕРЕМ: • 6-8 абрикос • 4 яйца • мука 200 гр • сливочное масло 150 гр • сахар 270 гр • сметана 180 гр • миндальная мука 50 гр • лимон 1 шт • разрыхлитель 1/2 ч л • экстракт ванили • экстракт миндаля • корица 2 ч л • соль 1/2 ч л ⠀ ГОТОВИМ: 1️⃣ Берем 90 гр масла и 170 гр сахара. Взбиваем миксером до «пушистости». Добавляем 1 яйцо. Взбиваем. И еще одно. ⠀ 2️⃣ Добавляем 1 ч л экстракта ванили, 1/2 ч л миндального и всю цедру от одного лимона. Трем не жалеем! ⠀ 3️⃣ Достаем муку, соль и разрыхлитель в нее! Берем сметану. По очереди добавляем ложку сметаны, взбили. Ложку муки, взбили. И так до бесконечности ⠀ 4️⃣ В сотейнике топим масло, которое осталось. Это 60 гр примерно. Как растает, добавляем оставшийся сахар 100 гр и корицу. Выключаем, даем остыть. Вбиваем 2 яйца. В горячее не вбиваем! Иначе получим омлет с сахаром. 5️⃣ Дно формы устилаем пергаментом. Вываливаем наше тесто. Поливаем сверху 2/3 содержимого сотейника. Посыпаем миндальной мукой. 6️⃣ Выкладываем абрикосы. На них оставшуюся 1/3 из сотейника. И в путь! В духовку на 190С на 40-50-60 минут. Зависит от глубины формы. Проверяйте зубочисткой. ⠀ Пожалуйста, вот эти вещи экстракт миндаля, ванили, корица и лимон — это ОЧЕНЬ важно взять.
