One of my favorite parts of #Thanksgiving? The appetizers! While you’re preparing all the good stuff for dinner, you need something else to munch on to get you through all that prep. My family always makes pasta salad, and it’s one of my favorite things about the Holiday season. But let me tell you — if you don’t use the right dressing, you’re blocking your blessings. I don’t put meat or cheese in my pasta salad, but if that’s your deal, feel free to add that step. Make this yummy dish on the morning of Turkey day and enjoy munching on it throughout the afternoon! Recipe below: Ingredients: * 2 Roma tomatoes * 4 celery stalks, diced * 3 carrots, peeled, then cut peels in half * 1 medium yellow onion, diced * 1 cucumber, diced * 1.5 cups broccoli florets, chopped * 1 box of rainbow rotini pasta * 1 bottle Bernstein’s Italian dressing & marinade Step by Step: * Heat water on high in a large pot to boil. Be sure to salt your water! * While the water is heating up, chop all ingredients. Set tomatoes aside for last. * Once the water is boiling, cook box of rainbow pasta to al dente texture. * Once the pasta is done, drain and immediately rinse with cold water. This prevents the noodles from sticking. * Pour into a large boil and stir in all chopped veggies (except tomatoes!). * Pour 3/4 bottle of Berenstein’s over top, and stir to combine. * Let chill at least one hour, then add tomatoes. Stir again to combine, then stick back in the fridge for another 30 minutes, minimum. * Before serving, do a taste check, and add more dressing if needed. * And boom! You’re done.
