La Palme D’or at Martinez Hotel in Cannes, France - 2 michelin star. - they have 7 interesting set menus. I ordered the prawns menu: - 1st course raw prawns fresh and nice with the sauce - 2nd course is very impressive, like a prawn tempura where the prawn inside is still soft and juicy. A fresh fusion japanese dish. - 3rd course prawns stuffed in langoustine, with a thicker traditional french sauce. Delicious too. - Wine by glass didn’t have many good choices, as I went on my own, so simply ordered a local Provence Rose and then Chassagne Montrachet. - Love its setting that table seating inside with airconditioning but with big open windows to beach view and sunset colors at night. With artistic deco. - Martinez is a beautiful hotel too, it’s the new western 5 star hotel, where Carlton is the traditional European 5 star hotel. 2015 Rene Lequin-Colin “Clos Devant” Chassagne-Montrachet ⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀ Francois Lequin is part of a winemaking family that spans over 300 years in Burgundy. The historic Domaine Lequin-Roussot was split in 1992 between Francois’ father Rene and brother Louis leaving nine hectares in the Cote de Beaune for Rene to start his own Domaine. The vineyards are mostly divided between Santenay and Chassagne-Montrachet, and as you might expect, there are indeed ties to the famed Colin family of Chassagne-Montrachet as Rene’s wife is Josette Colin. ⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀ Clos Devant happens to be located on the same mid-slope as some of the grand crus beneath the village of Chassagne. Of the 2 hectares in this clos, Lequin-Colin owns nearly half. The vineyard faces southeast and sits on a bed of clay and limestone. Ranging from 25 to 50 years old, the vines that live here are special, so much so that Francois will often use them for “selection massale” cuttings when replanting in other vineyards. ⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀ As part of his fundamental belief that winemaking happens in the vineyard, Francois is 100% committed to organic farming. The Domaine has practised organic since 2009, and some biodynamic principles were introduced in 2010. Grapes are hand-harvested and sorted. Known for his precision winemaking, harvest is based on acid levels in the grapes as opposed to sugars. Pressing occurs slowly over the course of 3-4 hours. The juice is allowed to oxidize prior to racking, and vinification occurs in 90% neutral oak with some of the lowest doses of SO2 I have encountered. These wines are direct reflections of the vineyards themselves and deserve a e nod to terroir and not just the idea of terroir. Insane bang for the buck. 15 Ramonet Vergers a little on the riper side with a more yellow fruited profile but overall there was enough acidity to keep the wine from feeling heavy. Pretty approachable now. 13 CLB NSG CDGV was slightly reductive on first pour but morphed into its usual, perfumed self after about 30mins in the glass. Krug 164eme (08 base) vs 08 DP: the Krug was broader, richer and more generous and I preferred it to the more highly strung, laser focused DP but I think I was in the minority here. 02 Niellon Les Chaumees fully resolved, slightly honeyed and nutty. As with all of Cathiard’s 2012s, the Orveaux had that wonderful purity and seamless texture. Too bad my last one. Lastly, 12 Mugnier Chambolle was showing really well. I was pretty critical of Mugnier after my last few poor experiences but this bottle offered some redemption. LET ME KNOW in the comments BELOW ⬇⁣ ⁣ Les Baudines is one of Chassagne’ most elevated Premier Cru sites. The vineyard is located at the very southern end of the commune, on the border with Santenay ⁣ ⁣ The top edge of Les Baudines reaches 1050ft (320m) above sea level on the upper slopes of the Cote d'Or escarpment that gives rise to Burgundy's best vineyards. While this is not quite as high as in the Saint-Aubin Premier Cru vineyards a little way to the north, this does give the climat a definite distinction over its neighbors, particularly in terms of the mesoclimate here ⛅ ⁣ ⁣ The vineyard angles toward the southeast, which gives an excellent exposure to sunlight, particularly in the mornings. However, at this altitude, the evenings are cooler, which tempers the effects of the hot sunshine. Sugar production slows down overnight, which lengthens the growing season and ensures that the grapes retain acidity as they ripen, making for well-balanced wines ⁣ ⁣ Les Baudines benefits from the Cote d'Or's limestone composition, with a soil that is made up of marly gravel and a little clay. The slope of the vineyard makes for good drainage, and so vines are not overburdened with water, instead they must work hard to extract it from the ground. Vigor is lessened as a result, and instead the vine will direct its energy into berry production ⁣ ⁣ The wines made in Les Baudines are not quite as famous as those from other Chassagne-Montrachet climats, and in particular the Grand Crus from the northern part of the village.
