Let’s talk CHEESE! I made this plate for a party on Saturday night. I’m frequently asked what exact cheeses I use on my plates. Usually I post those details on @cheesebynumbers, but I wanted to dig a bit deeper. It really depends on the event. If it’s a small gathering with friends I’ll pick up some less expensive cheese from the local bodega or Trader Joes. If I’m having a bigger party and want to impress the guests, I’ll spurge on cheese from @murrayscheese, Whole Foods or smaller Brooklyn cheese shops who I’ll tag in the photo

1 - Coupole from @vermontcreamery • This is a goat milk cheese and one of my favorites. The texture is gooey on the outside with a fresh, crumbly interior. I also love how the wrinkley exterior looks on a plate. Brain cheese! It’s amazing with drizzled honey, or quince jam (pictured on the plate). Key wine pairing would be a Riesling
2 - Annelies from @murrayscheese • This cheese is exclusive to Murrays, you can purchase it online! Hailing from Northern Switzerland, this is an alpine cheese with flavors of roasted hazelnuts and undertones of butterscotch. Pair with fresh fruit and a glass of sparkling wine
3 - Bay Blue from @pointreyescheese • This is a mild and mellow blue with earthy notes. I am a big blue cheese fan. The pungent flavor goes well with just about anything. Pair it with sweet flavors like fresh fruit and jams, or savory items like salads, pastas and vegetables. Key wine pairing would be Pinot Noir
4 - Comte Saint Antoine from @murrayscheese • From France, this cheese has a dense creamy texture and a staple on any cheese plate. Best paired with cured meat and rosemary sprigs. Key wine pairing would be a dry Chardonnay
