Finding the perfect, chewy chocolate chip cookie is tough -- especially when it comes to Paleo cookies. Luckily, we found the secret ingredient to the perfect : almond butter.
Ingredients
• 1 egg
• ¼ cup honey
• ¼ cup almond butter
• 2 T coconut oil, melted and cooled
• ¾ cup almond flour
• ⅓ cup coconut flour
• ½ t baking powder
• ¼ t salt
• ½ cup coarsely chopped dark chocolate
• Coarse sea salt, for sprinkling on top
Instructions
1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
2. In a large mixing bowl, beat the egg, honey, almond butter, and coconut oil until smooth.
3. Whisk in the almond flour, coconut flour, baking powder, and salt. Mix well until you get a cookie dough consistency. Let the dough sit for 5 minutes for the coconut flour to absorb the moisture. Fold in the dark chocolate chunks until they are evenly distributed.
4. Scoop 1 heaping tablespoon of cookie dough and roll it into a small ball between your palms. Place the cookie dough balls in a single layer on a baking sheet, leaving at least 2 inches of space between each ball. Press each ball down slightly to form the shape of a cookie.
5. Bake the cookies for 10 minutes, until just golden. Remove the baking sheet from the oven and sprinkle sea salt over the cookies.

Recipe-you will need a donut pan(silicon)
Fan oven 180 Makes 6
:
Dry ingredients-
.
1 Cup Spelt flour
1 C Almond meal
1/2 C coconut sugar
1 1/4 Tsp cinnamon powder
1 1/4 Tsp Baking powder
50g dark vegan chocolate -chopped into small pieces
.
Wet ingredients-
1 flax egg (1 Tbls flaxmeal mixed thoroughly with a fork with 3 Tbls water and left to sit for 10mins)
2 bananas-mashed (3/4 c)
2 Tbls pure maple syrup
3Tbls Almond milk :
Add all wet ingredients together and combine
Now add the wet ingredients to the dry,stir to combine, it will seem really dry but keep combining gently
Place spoonfuls into donut mould and level the top
Place in oven for aprox 17 mins check if cooked by sticking a skewer in, if it comes out wet it needs longer, if comes out clean they're cooked!!
Leave to cool or 10-15 mins before turning out onto a wire rack
Once Donuts are cold glaze them

For the glaze:
100g @loving_earth salted caramel
Place caramel into a small bowl and melt either in a microwave or in a ban Marie
Dip donuts and place on wire rack to dry before dipping again.
Keep in fridge.. they’re divine cold

I like to call these the “EVERYTHING MUFFINS”! ⚡️(I thought it was a little more succinct than “banana-coconut-choc-chip-protein muffins” ) This batch was gone in record time, so it’s safe to say that I’ll be making these again very soon! RECIPE
* 1/2 cup wholemeal flour
* 1 cup shredded coconut
* 2 scoops @macr0mike cookie dough protein (can sub for 2 - 3 tbsp of peanut butter)
* 1 tsp baking powder * 1 tbsp vanilla * 1/2 cup cup choc chips
* 3 bananas
* 1 cup water
I like to blend the water and bananas in my @nutribulletaus then mix that in a bowl with the dry ingredients. Bake at 175°C for 12-15 mins and get ready to dig in to some muffiny goodness!
