In Greece, the month after lent is spent eating meat and the by-products (milk, eggs, cheese) that were given up during those long 40 days. Okay...so I technically didn’t give up any by-products this year, but I’m still allowed to overindulge in the aftermath, right? This spanakopita was our Mimi’s recipe, was passed on to our mother, and now us. Using phyllo dough and feta cheese from @madfeta, this batch of spinach pie would be sure to make our Mimi proud
