Rhubarb is an awesome vegetable. Sour af on its own when completely saturated with sugar I think it is one of the best flavours out there

RHUBARB MARGARITA

2 oz blanco tequila
1 oz homemade rhubarb syrup
1 oz fresh lime juice
1/4 oz black pepper honey syrup
.
Shake with ice and strain into coupe. Garnish with a rhubarb ribbon and pop in an oversized clear ice cube for fun - #cubesincoupes

Rhubarb pairs really well with both pepper and honey, and tequila seemed like an obvious choice for the base. The tequila turned out to be a little strong for the rhubarb but still resulted in a quality margarita! How did I go @the_margarita_mum ? I might actually pull out the vodka for this one next

Yesterday’s cocktail featured a bottom layer of red thanks to clarified strawberry , and that was enough for us to be heavily inspired to get a bit crazy. Crazy how, you ask? Well, we did a cocktail a couple weeks back with a thin red layer of bitters. It looked awesome . We want that, but with a blue layer on top. The only catch is that we do not have any high proof blue bitters. So blue curacao was the obvious choice. But that makes for another catch. Blue curacao is a notorious bottom layer, thanks to its sweetness and lower abv. How the heck are we going to get that to float? Well, we did it! And we want you to guess how we did it in the comments. So guess away!

▪️.66oz Clarified Blood Orange Simple
—Middle Layer
▪️1.5oz @tequilatapatio
▪️.25oz Lemon
▪️.25oz Orange
▪️BS Gum Syrup
—Top Layer
▪️.75oz Magic @giffardusa Curacao
Place a clear block of ice from @mnpureclearice in cocktail glass. Start by pouring in the tequila mixture. Next pour the clarified blood orange simple over back of spoon against the glass. That will allow the higher density liquid to drop to bottom of glass. Next we add the secret curacao mixture. Just place barspoon upside down above mixture (or over ice) and slowly pour. Boom! You should end up with something like our little bit of Fourth of July magic above. Maybe we should have saved this one for the holiday...

The Super 8 may look pretty, but it is a heavy hitter. Which makes sense, as the only abv lowering substances are in minimal quantities. Plus the biggest punch comes directly from the middle. The drink looks like fireworks, and will most likely result in some fireworks in the ole noggin.

Note to self: when creating a cocktail to show off layering, use a clear glass. Not the recycled glass with color streaks that we decided to use. Sort of takes away from the whole layering effect. Or at least makes it not as obvious. Case in point, you should be seeing some nicely separated layers in this cocktail. Kind of tough? Exactly. Clear glass. Note to self.

▪️.5oz Velvet #Falernum
▪️.25oz Lemon
▪️.25oz Orange
—Middle Layer
▪️.5oz @stgeorgespirits Nola Coffee Liqueur
—Top Layer
▪️1.5oz @mezcallosjavis #Reposado #Mezcal
▪️BS @giffardusa Vanilla Liqueur
All layers were given a quick stir on ice before being poured into the glass with a large block clear ice from @mnpureclearice. We then garnished with a sprig of Chocolate Mint.

With a layered drink, there are two ways to approach it. Stir the drink (or shake) to force the layers to mix and enjoy the balance that comes from that, or start drinking the cocktail undisturbed and enjoy the fact that the flavor will be slightly different with each sip. We added the barspoon if Vanilla liqueur to ensure that the top layer doesn’t scare one away. As the first couple sips are clearly going to be mostly Mezcal. However, the bigger the sip the more the flavor, as the ice helped the lower ingredients to transfer up pretty quickly. Not much secret on what to expect, as the Matador provides flavors of coffee, nut, vanilla and smoke. If you love Mezcal, enjoy this cocktail with the layers. If you are not the spirit’s biggest fan, feel free to stir out the layers to better dial back the smoke and provide more balance. In regards to how we like it... Bring on the Mezcal!

• 1.5 oz vodka (or gin or tequila or Mezcal)
• 1/2 oz @cappelletti_aperitivo
• 3/4 oz fresh lime juice
• 1/2 oz strawberry syrup
• Dash of angostura bitters

Combine ingredients into a cocktail shaker and shake with ice. Strain into a glass, and fill with crushed ice. Garnish with mint and a strawberry
