Cauliflower soup two ways;
Creamy roasted cauliflower soup using the head of the cauliflower but don't let those lush cauli leaves go to waste, they are delicious made into a soup of their own with crispy bacon and a pinch of chilli.
Creamy roasted cauliflower soup;
1 head of cauliflower roasted
2 cloves of roasted garlic
3 potatoes
3 cups of chicken stock
Salt and pepper
Olive oil
1/2 cup of cream.
Directions;
Roast diced cauliflower and garlic in oven until slightly browned.
Then combine all ingredients to a saucepan and cook until potatoes are tender, add salt and pepper to taste, remove from heat, add cream and blend to desired constancy.
Cauli leaves, bacon and chilli soup;
3 to 4 cups of chopped cauliflower leaves
1 stick of celery
1 small leek
4 rashers of crispy bacon
Pinch of chilli to taste
3 cups of chicken stock
Olive oil
Salt and pepper.
Directions;
Cook bacon, celery and leek in olive oil in a large saucepan until browned. Add chopped cauliflower leaves, chicken stock and chilli and simmer until leaves are cooked through. Add salt and pepper to taste, blend to desired consistency.
I am just a home cook with a hungry family to feed, not a chef by any means, but these are a couple of my favourite ways to eat cauliflower while it is in abundance in the garden.
What herbs, veggies & flowering plants for pollinators would you grow here? Sun exposure will vary depending on what side of the tree the bed is on. Interesting microclimates for shade gardens will develop slowly as the tree grows too! It looks like a lovely space to walk slowly & connect with the Earth. (photo shared from @hortainlove)

The wall of peas have been pulled! While I miss the monster in the garden, it's nice to be able to see the climbing cucumbers back there doing their thing. Today we're also adding a new trellis to the back of the zucchini box for the last round of beans just popping up.

Grow Pineapples from scraps I had a few messages about how to grow pineapples from scraps after my last post so here is a little visual guide ✨ There are a few different ways to grow them but this is just the way I do it.
~
1. Cut off the top of a pineapple, remove the flesh and pull off some of the leaves to reveal about and inch of stem.
2. Place in a jar of water and leave until it has a good set of roots.
3. Plant in either a warm, sunny sheltered part of the garden or in a pot so you can move to warmer spots in winter.
4. Wait patiently for 2.5 years so worth it though ✨

Note: not all countries have access to pineapples with the leaves on due to being removed in the importing process (sorry New Zealand). Unless you make friends with my parents who have been growing them for so many years before this import rule came into place

The cold winter wind chills me to my core, but it doesn't deter me, call me determined or obsessed it all depends on how you look at it. My finger tips are numb from cold, but still I sow seeds, each one is a little glimmer of hope and an intricate piece of the summer garden to come. Pops of yellow and white from the softly scented jonquils, primroses, cyclamen and the nodding hellebores stand out against the splashes of green and the sheer nakedness of the bare fruit trees. My heart aches for the flowers and the sea of colour that was here only a few months ago, now with each new surprise that opens I find myself dropping to my knees to admire them, breathe in their scent and enjoy all that the winter garden chooses to share with me. Lemon, lime and lemonade trees with their lush shiny green leaves and brightly coloured fruit are the winter showstoppers, decorated with little yellow baubles that draw you in. I fill baskets with their fruit, in turn filling the air with their zesty scent. The almost bare berry arbours stand proud and remind me I need to finish pruning them, strawberry runners are escaping from their raised beds begging to be transplanted, newly sprouted sweet peas are sending out tendrils searching for the supports I am still yet to build. The garden is at a stage of resetting, where every new change draws you in and has you wrapped around its little finger, enjoy this time, because before we know it spring will return, and with it comes the fast paced world of caring for the spring and summer garden.
I’m harvesting a bowl of blackberries every day right now! .
I’m growing a cultivated variety called ‘Loch Ness’ which is thornless. The berries grow on last year’s growth, so that makes it easy to prune.

Some are going into the freezer for future smoothies and Autumn crumbles, some are going into cup cakes. I love to bake! .
