Tigernut Butter Cassava Chip Fudge (AIP, PALEO) & by : @aipnutrition .⠀
Makes: ~20-30 squares

Prep time: 5 mins
.
Ingredients:
1 cup Tigernut Butter
1/2 cup coconut butter, plus extra for drizzling
1/4 tsp salt
1/2 tsp vanilla (optional)
1/2 ripe avocado
2 tbsp carob powder
1 tbsp maple syrup
1/3-1/2 cup crushed @artisantropic Cassava Strips

Instructions:
Line a 8x8 baking dish with parchment paper.
In a microwave safe bowl, soften the coconut butter and tigernut butter on high for 30-40 seconds.
Whisk in the salt and vanilla.
Pour fudge into lined dish and refrigerate for at least 1 hour, or until set, before frosting.
Meanwhile, make the carob frosting by blending together the avocado, carob powder, and maple syrup until smooth.
Layer the tigernut fudge with frosting, cassava chips, and a drizzle of melted coconut butter. Fudge can be stored in the refrigerator or freezer.

Even if I had to face a not so good announcement. I did my polysomnography last night and the verdict is that I have about 40 sleepapneas per hour. It is a shock for me, I wasn't ready for that. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Is the Paleo Vegan Diet a low-carb diet?

✅The simple answer is ‘no.’ There are many great high-carb, paleo vegan foods to help you get your adequate daily intake of fiber. Dietary guidelines typically recommend that carbs provide 45 to 65 percent of your daily calorie intake. So if you eat a 2000-calorie diet, you should aim for about 225 to 325 grams of carbs per day.

❌However, at the bottom of the food pyramid are carbs and fiber coming from grains, pseudograins, and legumes. These are not allowed on a grain free or paleo vegan diet.

So... today was definitely what I call a TWO-PINK-DRINK-KIND-OF- A-DAY!
This pic taken at 7 am this morning, after I had worked Nurseline all night.. Normally, I would have gone to bed Monday morning, after working all night... But TODAY was special.. Owen’s meet and greet at school for 1rst grade!
Couldn’t miss that! (And so glad I didn’t!) After that, I decided it was the last day before school started, that we could go to White Water...
So.... splish splash off we went! We had a Blast there all day.. ♂️♀️. It’s finally after midnight.. and I can’t believe I’m still not feeling bad! I’ve been up for more than 36 hours! ⏰
