So let’s talk about these vegan carrot and chickpea fritters then shall we?! They’re light, and deliciously healthy yet hugely nourishing and SO easy to make!! All you need is:

• 4 peeled and grated carrots
• 1/2 red onion, peeled and chopped
• 50g (1/3 cup) sweetcorn
• 90g (1 cup) chickpea/gram flour
• 1 tbs olive oil, plus extra for frying
• 1/2 tsp ground cumin
• Salt and pepper

1️⃣ In a mixing bowl, combine all ingredients mixing them together with a wooden spoon and adding salt/pepper to taste.
2️⃣ Form the mixture into 6 fritters, each 8-9cm across (you might have to flatten them with a spatula)
3️⃣ Heat a little olive oil in a frying pan, on a medium heat. Fry for roughly 3 mins each side: they should be turning golden brown and cooked all the way through!

I paired them with sautéed new potatoes, broad beans, avocado topped in cayenne pepper, homemade sauerkraut and corn on the cob, all on a bed of spinach. They also really go well with hummus, but I didn’t have any☹️
