SOMETIMES GLUTEN CAN BE SNEAKY! Some areas to keep an eye on at home: . 1. If your whole household isn’t GF, make sure gluten containing items are stored at the bottom of the fridge and pantry. Better yet get your own separate GF pantry/mini fridge (if possible) . 2. If your pet is eating gluten containing food, it could be a potential point for cross contact. If they lick you or lick something you touch, it could cause cc. (Thanks @bloatedbelly_co for inspiring me to talk about it) . 3. Use of wooden spoons that were once used to cook gluten. This also goes for wooden cutting boards and scratched pots and pans. . 4. SHARED peanut butter or jelly jars that have had knifes touching bread in them. If your household isn’t 100% gluten-free make sure you have a separate (and labeled) GF peanut butter and jelly jar (and other kinds of spreads) . 5. Toasters, waffle makers, bread makers, George Forman grills, etc. are all points of cross-contact if they have previously cooked gluten containing foods. Ditch em and feel better! . HAPPY FRIDAY LOVES! Let’s celebrate the weekend with the GF + Vegan CARROT CAKE Snack Cake I promised yesterday! It’s made in 1 bowl , less than 10 ingredients , naturally sweetened with bananas , and SO easy to throw together (it literally took me 10 minutes!)... . . Plus, 100% FOOD ALLERGY FRIENDLY #nutfree, #dairyfree, #eggfree, #glutenfree, #soyfree... but NOT free of flavor! . . ‼️Save this one for later... . You’ll need... 3-4 extra ripe bananas, mashed (1 1/2 cups) 1/4 cup melted coconut oil 1 1/2 teaspoons pure vanilla extract 1 1/4 cup oat flour (about 1 cup rolled oats pulsed into flour) 2 teaspoons baking powder 2 1/2 teaspoons ground cinnamon 1 teaspoon ground ginger 1/2 teaspoon salt 1/2 cup raisins 1 cup shredded carrots . ‍ How to make it... 1. Preheat oven to 350°F. 2. Coat an 8x8 pan with oil or parchment paper and set aside. 3. In a large bowl, mash bananas well, but feel free to leave some larger chunks. Add coconut oil and vanilla extract, and mix to combine. 4. Slowly add the oat flour, baking powder, cinnamon, ginger, and salt and mix until just combined. Do not overmix. Fold in shredded carrots and raisins. 5. Pour batter into your prepared loaf pan and sprinkle additional raisins on top, if desired. 6. Bake for 27-30 minutes, or until edges brown and slightly pull away from the sides of your pan. Let cool completely before slicing to enjoy!
