Happy spring! This is a naturally-leavened focaccia decorated like my garden! I used foraged mugwort and wild chives as well as some tomatoes, red onions, and red peppers. Inspired by @imjusthereforthebaking

Japanese knotweed aka wild rhubarb (a name I much prefer, thanks @edible.leeds ) Not a loved garden plant but a rather tasty edible, similar to rhubarb. It's pretty delicious as a couli mixed with strawberries, this lot will be heading for gin and enjoyed in a few months time. The main thing to watch out for when picking it is that the ground where it grows hasn't been treated with weed killer! And be super careful when disposing of any bits you don't use- I incinerate mine in my wood burner to make sure I don't spread this super invasive plant

We had some success morel hunting in Kentucky this weekend . I love hunting for these little guys, they can be such a challenge to find that the hunt turns into a game of eye spy. They only pop up in the spring, so these mushrooms are rare- and expensive to buy!

This week I am posting photos of mushrooms in my hand: here is a trio of edible mushrooms! Black Trumpets (Craterellus fallax), small yellow chanterelles (Cantharellus minor), and Cinnabar chanterelles (Cantharellus cinnabarinus)! These beauties are quite small but easy to spot in the summer/fall! One of my absolute favorites are the black trumpets.
