The other night, my honey and I had delayed dinner until it had reached 7 and then we looked at each other with the look that says “uhhh were both hungry and if we don’t figure out what we’re cooking soon, we might turn into hangry monsters...” instantly, I came up with this menu ⬇️ and it only required $7 plus 10 min cook time!
Here’s how:
While I sautéed the chicken in balsamic, oil, and sea salt, he picked up tzaziki, hummus, pita, & falafel (for funzies) from @pitahousesc right down the street. But all of those can easily be picked up from the grocery too! #simple

Happy Monday! (english below) Ich bin kein riesiger Chiapudding-Fan, weil er mir meistens zu fad schmeckt. Aber diese Variante mit Haselnussmilch, Haselnuss-Schoko und Kakaopulver und Dattelsüße war mega lecker! Zusammen mit frischem Obst, das ich vom Markt gerettet habe war das auf jeden Fall ein tolles Dessert. Auch wenn ich es gerne anders hätte, bin ich gesundheitlich gerade leider wieder nicht ganz so fit, wie ich gerne sein würde. Ich habe in der letzten Zeit einiges ausprobiert und an meiner Ernährung geändert. Vieles hat geholfen, manches hat mich in eine Sackgasse geführt. Aber so ist das nun mal, wenn man Lösungen sucht. Ausprobieren. Mutig sein. Reflektieren und ehrlich zu sich selbst sein. Neue Wege einschlagen. Weitergehen und nicht aufgeben. Kurz innehalten und Kraft tanken kann oft Wunder bewirken. Ich weiß, ich werde meine Ziele erreichen. Ich weiß, ich werde wieder ganz gesund sein. Und ich gehe diesen Weg mit ganz viel Liebe und Geduld❤. A lot has helped, some things have led me to a dead end. But that's the way it is when you're looking for solutions. Try it out. To be courageous. Reflect and be honest with yourself. To break new ground. Go on and don't give up. I know, I will reach my goals. I know, I will be completely healthy again. And I go this way with love and patience❤. Okay guys..clearly I like waffles but this savory plantain one came out next level and it literally took 10 mins. Give it a whirl!! Recipe I served mine with 2 over easy eggs, some leftover smoked salmon, fresh cilantro and mash
You need:
1 plantain (I used a mostly yellow one with some black spots for some sweetness. If you use a green one, recommend boiling the plantain first to soften)
1 Tbs lard (I used a high quality lard from @belcampomeatco , you can totally sub coco oil)
1 pasture raised egg (from @belcampomeatco too )
1/4 cup green onion, sliced thin on bias
1 tsp red chili flakes
1/2 tsp sea salt
1/4 tsp cinnamon
1/4 tsp onion powder
Pepper to taste
To make:
Pre heat waffle iron over medium high heat, oil w coco oil
In med mixing bowl, mash plantain w a fork or potato masher
Add remaining ingredients to the bowl and mix until well combined
Add mixture to waffle iron and cook until golden brown, about 10 mins
