360 grams Otto’s Naturals – Cassava Flour (or about 2 1/2 cups).
2 cups organic cane or maple sugar.
2 teaspoons baking powder.
1 teaspoon baking soda.
1 teaspoon salt.
1 1⁄2 cups avocado oil.
3 large eggs.
2 cups finely grated carrots.
1 cup crushed pineapple, well drained.
1 teaspoon vanilla.

Instructions:
.
1. Preheat oven to 325 degrees Fahrenheit.
2. Sift together Otto’s Naturals – Cassava Flour, sugar, baking powder, baking soda and salt.
3. In a separate bowl beat eggs slightly and add oil. Beat together.
4. To the egg and oil mixture, add carrots, pineapple, and vanilla mix well.
5. Gradually add sifted dry ingredients to egg and oil mixture, stirring well after each addition.
6. Pour into greased and floured 10” tub pan or two 9” layer pans or 9” x 12” sheet cake pan. Bake until toothpick inserted in middle comes out clean (Tube pan for 1 hour) (Layer pans for 35 minutes) (Cake pan for 45 minutes).
7. Frost with your favorite icing once cake has cooled.

This was a #meatlessmonday hit and I love it because it is a #30minutemeal yes!! Asian style veggie noodle stir fry. This is always a hit with my kiddos and all the #recipe details are below . It is super versatile as you can use whatever veggies you have on hand and I did this one today with green and red cabbage and kale. I also added some fresh cilantro and chopped almonds for some extra flair and crunch but not necessary if you don’t have it on hand. It is super delicious and it can be served over rice or over noodles or it can even be served on it’s own without noodles. This is on constant rotation in my weekly #mealplan arsenal. and it is even great reheated as left overs too. I also love this with a little #lactofermented kimchi @thirtyacrefarm and some pickled ginger @the_ginger_people . Enjoy from @chef_emery ⚡️oxox
1 cup #glutenfree low sodium tamari @sanjtamari
2 tbs #local raw honey
2 tbs coconut oil
3 cloves of garlic peeled and minced
1 tbs minced fresh garlic
Pinch of sea salt
Freshly ground black pepper
1/2 green cabbage washed, cored and chopped
1 small red cabbage washed, cored and chopped
1 small bunch of kale, washed, ribs removed and chopped
1 package of gluten free spaghetti noodles or Asian style noodles cooked
3 tbs almonds chopped (optional garnish)
2 tbs fresh cilantro washed and chopped (optional garnish)
Take a small bowl and add tamari and honey. Whisk well and set aside briefly so flavors can come together. Now take a large wok or pot and add coconut oil and place your stove top to medium heat. Once hot, add garlic and ginger and sauté 2 minutes to infuse the oil then immediately add the green and red cabbage, kale, sea salt and black pepper. Sauté for 8-10 minutes till veggies begin to wilt. Now pour the tamari/honey mixture over the veggies and let simmer on low for 5 minutes so all the flavors can come together. Cook the noodles then toss the drained cooked noodles through the veggies. Before serving, garnish with another splash of tamari and a sprinkle of crushed almonds and cilantro. Serve immediately. ❤️
