Avocado Fudge–
Ingredients (2 servings):
2 medium avocados, cubed
1 ripe banana
¼ cup honey
⅔ cup coconut oil, melted
1 squeeze fresh lemon juice
1 pinch salt
walnuts, chopped, to taste
coconut flakes, to taste.
Preparation:
In a blender of food processor, combine avocado, banana, honey, coconut oil, lemon juice, and salt.
Blend until smooth, scraping down sides as necessary.
Pour mixture into a parchment lined 8x8 inch (20x20 cm) freezer-safe dish and top with chopped walnuts and coconut flakes, or your favorite toppings!
Freeze for at least 3 hours.
Remove from freezer and cut into squares.✨

Chocolate Avocado Brownies–
Ingredients (2 servings): 1 ripe avocado, cubed
2 eggs
½ cup honey
1 teaspoon vanilla extract
⅔ cup whole wheat flour
¼ cup cocoa powder
1 teaspoon baking powder
Preparation:
Preheat oven to 350°F (175°C).
In a blender or food processor, combine avocado, eggs, honey and vanilla extract. Blend until smooth, scraping down sides as necessary.
In a large bowl, whisk the flour, cocoa powder and baking powder.
Combine the wet and dry mixtures and fold until a batter forms. Pour batter into a greased 8x8 inch baking pan.
Bake for 20-30 minutes. Allow to cool.

Take chicken salad to a new level with the addition of avocado. This naturally creamy chicken and avocado salad is healthy and contains no mayo or sour cream !

Ingredients
2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
2 ripe avocados, pitted and diced
½ cup corn (roasted, canned, or frozen)
¼ cup red or green onion, minced
2 tablespoons cilantro, minced (or parsley or dill)
2 tablespoons lime (or lemon) juice
2 tablespoons olive oil
salt and pepper to taste

Instructions
In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.
Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.

Notes: additional add-ins that go well with this salad include chopped tomato, chopped cucumber, bacon chopped and cooked, or black beans.

This will be my last post of my raspberry series. Otherwise I think that my histamine bucket will completely overflow. It always comes slowly and soft but then it hits me really hard. And now I feel quite some discomfort regarding my histamine problems. I try to cut back on histamine in the next time. .
This is why histamine intolerance is very tricky. Because for me it is hard to realise when my histamine is out of balance. The symptoms always hit me very hard overnight. But never the less I keep up trying new foods from time to time. But I cannot include histamine rich food every day. But never the less it is also possible to eat good and delicious food with histamine intolerance. .
