Two things:
1. Quince Jam is a very economical way to make jam, all you need is Quinces, water & sugar. Much cheaper then buying kilos of berries or strawberries that are well and truely out of peak season.
2. Choose your quinces wisely, look out for bruising, or if they are too green, they need to be a buttery lovely yellow colour.

Strawberry & Chocolate Cake
Recipe

Base/Sponge:
4 eggs (separate eggwhites)
4 tbsp sugar
3 tbsp flour
3 tbsp cocoa
1 1/2 tsp baking powder

Method:
First, separate egg whites and beat until they form soft peaks. Once done, leave on the side.
Combine yolks and sugar, beat until the mixture is smooth and creamy. Add flour, cocoa and baking powder. Add eggwhites.
Bake on 180 degrees in a fan forced oven for 10-15 minutes. ⠀⠀
Strawberry Mousse:
300g strawberry yoghurt
500g frozen or fresh strawberries
50g sugar
Vanilla extract or vanilla sugar (if using small packets of vanilla sugar then you will need 2 of these)
500ml thicken cream (whipping)
15g gelatine powder

Method:
Sprinkle gelatine in 120-130ml cold water and wait until it’s spongy. This will take up to 5 minutes.
Meanwhile, in a blender or food processor combine strawberries and yoghurt and blend until smooth.
Add sugar (and vanilla sugar or extract). Transfer to a pan and heat for a few minutes, just long enough for sugar to dissolve.
To make the gelatine - stand the bowl in a heatproof bowl of hot water and stir until gelatine dissolves. Cool slightly before adding to strawberry mixture. (Watch a youtube video on how to do this if you are not sure). Whip the thicken cream until firm, add to strawberry mixture and fold together using a spatula or a spoon.
Leave in the fridge for 2-3 hours and then pour over the base of the cake. Leave in the fridge overnight to set. ⠀⠀
In the morning,melt 200g dark cooking chocolate and 200ml thicken cream. Pour over the cake and leave to set. It’ll be ready to decorate soon after!!!

VEGÁN Jeruzsálemi kalács
A múltkori kakaós csigából varázsolt somlói galuska, nem igazán elégítette ki "a valamilyen kakaós tésztát akarok enni" iránti vágyamat. Ugyanazzal a recepttel már nem akartam próbálkozni, egy ideig pihentetem. Lapozgattam az instát és szembe jött velem egy babka, ráadásul vegán verzióban! Nem volt kérdés, meg kellett sütnöm! Olvastam, hogy nem könnyű formázni, így Youtube videókból okosodtam, és azt kell mondjam, egyáltalán nem nehéz. Lényeg, hogy szorosan kell feltekerni. Pontosan követtem a receptet, mégpedig ezt:

Mivel nem formában sütöttem, csak simán tepsire tettem, ezért nem felfelé nőtt, hanem oldalra terült, de az ízén ez nem változtat, nem lehet vele leállni, annyira finom!

Hallo lieber Mai! Da ich leider noch keine Maiglöckchen im Garten habe, muss ich mir halt die Blumen selber backen...wenn du wissen willst wie man die macht, kannst du einfach meine Fotos mal durchschauen...das Rezept ist das der schwedischen Zimtknoten aus School of Baking. Der runde Ausstecher hat ca. 5 cm Durchmesser und der leckere Punkt in der Mitte ist mit der Konditorcreme gemacht (halbe Menge Rezept reicht, auch in School of Baking). Viel Spass und schönen 1. One a penny, two a penny....!!!! decided to make this for the season on a yearly basis when I started having my own kitchen. Fresh from the oven, used a different recipe this year from #bbcgoodfood and it turned out softer and fluffier than last year's!
