A few months ago, I took a poll in my insta stories about muffins asking if you preferred blueberry muffins or chocolate chip muffins. The result (winning by a landslide!) was blueberry muffins. My vote is blueberry too I was surprised because I just always assume the majority will choose chocolate!!! -Ingredientes
Para 12 magdalenas
* 4 huevos
* 150 g de azúcar
* 60 ml de leche
* 80 ml . de aceite de girasol
* 100 g de Mantequilla
* 200 g de Harina
* 14 g de Levadura en polvo
* Una pizca de sal (3 g)
* La piel un limón rallada * Un poco de azúcar para espolvorear
Derretir la manteca en el microondas y dejar templar (salpica, poner tapa)
Batir los huevos junto con el azúcar hasta que espumen bien. Añadir la ralladura de limón, la manteca templada, el aceite y la leche. Batir de nuevo hasta que se se integren todos los ingredientes.
Incorporar la harina junto con el polvo de hornear (o directamente harina leudante) y la sal a través de un colador, yo bato con la batidora. Llevar a heladera durante una hora, este paso es muy importante. Tiene que quedar muy frío (yo a veces lo meto en frizzer)
Colocar los pirotines dentro de la bandeja para cupcakes. Podes usar también moldes de silicona. Llenar 3/4 partes de los moldes y espolvorear un poco de azúcar encima, (poco)

Happy friYAY - treat yo’ self with these dairy-free, gluten-free Banana Walnut Muffins topped with maple cashew frosting and honey glazed walnuts recipe for the Banana Walnut Muffins are on allisapron.com (link in bio).. I made the maple cashew frosting by blending the following: 1 cup cashews (that I soaked overnight), 2 tsp lemon juice, 1 tbs water, 1/8 cup maple syrup, 1/8 cup coconut nectar, pinch of Himalayan pink salt, dash of cinnamon and about 1 1/2 tsp vanilla extract. Blend until smooth then refrigerate for 2 hours before frosting muffins! I’ve also paired this frosting with chocolate cupcakes before and it was delish .. for the honey glazed walnuts you need about 1 cup of raw walnuts and 2 tbs honey (I used @gldnblossomhoney). Mix together until walnuts are well coated and sprinkle in a bit of salt. Bake the walnuts at 300 degrees for 10-12 min (tossing half way through) on a parchment lined baking sheet. Place walnuts on a parchment paper covered rack to cool about 5 minutes before using to top the frosted muffins!

Most muffins are loaded sugar and white flour. BUT - this healthy Muffin-in-a-Minute recipe is quick, easy, very low carb, high in fiber, and virtually no sugar and no flour! A decent amount of protein also with the egg and healthy fat from the flax! Can you say, #WINNING !! I make this for breakfast, a mid-afternoon snack or seriously even dessert!

You can make this healthy muffin "as is" or add fruit and nuts.(I add blueberries and walnuts.) Or you can make it savory to go with salads and soups. Substitute out the sweetener and add in shredded cheese, chopped veggies, and spices! Make this recipe your own!
INGREDIENTS>>
1/4 cup ground flax seed meal
1/2 teaspoon baking powder
1/4 teaspoon stevia powder
1 teaspoon cinnamon
1 egg
1 teaspoon olive oil
Optional add in's: berries, walnuts, or other nuts/seeds, cheese, veggies, spices.

1⃣Mix all ingredients in a coffee mug.
2⃣Microwave for 1 minute on high. (If using fresh or frozen fruit, microwave for 1:30 on high.)
3⃣Dump out of coffee cup onto your plate, let cool and ENJOY!
