{BLUEBERRY LEMON POP-TARTS!!!}

Anyone else In need of a childhood pop tart flashback?! COME AND GETEMMMMM
.
For the pastry:
.
Organic all purpose flour, 2 cups
Coconut sugar, 2 tbsp
Unsalted butter, 1 cup, diced
Milk or water, 1/4 cup
.
For the filling:
.
* Frozen blueberries, 2 1/2 cups
* Coconut sugar, 2 tbsp
* 1 tbsp lemon juice
* 1 tbsp chia seeds
.
Method:
1. In a large bowl, with a fork and knife or a potato masher, cut butter into the flour until it is crumbly. It will make a mealy consistency. Add the milk (or water) and stir in well. Cover bowl with a cloth. Chill for at least 2 hrs.
2. Combine blueberries, sugar, chia seeds and lemon in a small saucepan. Cook over low for about 20 mins until the berries pop and it thickens.
3. Retrieve dough- it if will not form a ball in your hands, add a tbsp of water at a time until it does. it should be crumbly, but stick together when pressed. Roll out dough on a floured surface to 1/4th inch thick.
4. Cut into desired size of squares. Add desired amount of blueberry filling. Add another square on top and press edges with a fork. Re-roll dough as necessary to use it all.
5. Bake on 375 for 18-22 mins.
6. Cool and serve with honey or maple syrup! #DIYsustainableliving

Raised beds for miles ...! We cleared the remaining cover crop from our raised bed garden today. Swipe left to see!

We planted a mix of vetch, peas and oat grass in our side-yard raised beds October 31, 2018, and that which we didn't cut down earlier grew to form a super dense hedge topping out well over 3' tall. Needing to get peppers and tomatoes in within the next week or two we took down the rest of the cover crop today.

We used an electric hedge trimmer and loppers to cut the crop to the soil line, leaving the roots in the soil to decompose and form aeration. We then chopped the green biomass into small pieces, about half of which we put back on the beds to form a mulch that will decompose over the next several weeks. .

Red currants, grown on a large shrub without thorns, they are tart and juicy.

White currants, also grow on the large shrubs without thorns, they are similar in taste to the Red currants however slightly sweeter.

Strawberries, I grow 13 varieties of strawberries in my garden, this one is a 'Lowana'. A great tasting strawberry, very aromatic and juicy.
.
Loganberries, the fruit grow on thornless rambling canes, they taste like a giant juicy raspberry.
.
Boysenberries, thorny long rambling canes, the plants need support, they taste like a tangy raspberry with the juiciness of a blackberry.
.
Silvanberries, a thorned bramble berry, they have an amazing blackberry flavour and very juicy.
.
Raspberries, I grow 8 varieties of raspberries here, this one is 'Chilliwack'. They grow on upright canes with some thorns. They are sweet and floral with a hint of tartness.
.
White Alpine strawberries, I grow both reds and white alpines. They are smaller is size than classic strawberries however, what they lack in size they make up for in flavour, this one is 'Fraise de Bois
.
Youngberries, are the earliest bramble berry in the season, thornless, very long rambling canes, need support. The flavour is more blackberry like than the Boysenberries but still with a tart finish
.
Tayberries, also a thorned bramble berry, their flavour is like a sweet raspberry.
.
Marionberry, my personal favourite, similar in growth habit and shape to a Silvanberry but fruit a few weeks later, the sweetest blackberry taste
.
Gooseberries, I grow two varieties, one thorned and a thornless, they are tart fruit that grow on large shrubs.

Blackcurrants, large shrubs, tart and earthy when eaten fresh, delicious cooked.
.
Waldo blackberries, a dwarf thornless blackberry, would suit large pot if you gave it a support structure, tasty blackberry flavour.
.
Jostaberry a cross between blackcurrant, gooseberry and coastal black gooseberry, tart and fruity flavour. I grow so many varieties to make our fresh berry season last much longer. I adore all my homegrown berries.

Looking back to where we started just two short years ago and considering that all gardening is done in a few evenings during the week and on the weekends, I cannot help feeling a little proud .

A fun few days filled with lots of baby sounds, diaper changing, and new adventures. We've loved every second of it. Not sure the animals really know what's up, but they sure do know something is different .
