Garlic Parmesan Zucchini Chips
INGREDIENTS
2 Large Zucchinis
2 Large Eggs
2 Cups Breadcrumbs
3/4 Cup Parmesan Cheese
1/3 Cup Fresh Basil
1 1/2 Tsp Red Pepper Flakes
1 Tsp Pepper
1 Tbsp Garlic Powder
1 Tsp Salt
PREPARATION
1. Preheat the oven to 450F/230C.
2. Slice the zucchini into thin slices.
Prepare two bowls: one with the whisked eggs, and another larger bowl with breadcrumbs, Parmesan Cheese, basil, red pepper flakes, pepper, garlic powder, and salt.
3. Dip the zucchini slices in the egg first, and then into the breadcrumb mixture.
4. Bake for 15-20 mins, flipping halfway through.
5. Serve and enjoy

Randomness. I love sharing my easy random dinner ideas with you guys. Usually it starts with “what if I...”
Tonight I wanted to roast some zucchini and then it went from there.
Here’s what I did...
Sliced 2 medium zucchini, tossed it avocado oil and sprinkled with Trader Joe’s garlic salt. Roasted the zucchini on a sheetpan-400 degrees for 20 minutes. Added pizza toppings and broiled for 3 minutes. It’s amazing and I look forward to trying this with different toppings!
**I used 1/2 cup Mezzetta marinara.
