THE BEST CREAMY PESTO PASTA
- you will need:
• 1 (hefty) portion pasta (i used bucatini but i looove @eatbanza spaghetti), cooked to packet instructions • 1/2 onion, chopped (i acc used a whole one but i luuurrvvee onion a lot)
• 1 clove garlic (optional, i didn’t acc use one)
• almond milk (amount is variable but approx 1/4 cup)
• 1 heaped tbsp nutritional yeast (+ more if desired)
• homemade or store bought pesto (i love @sacla_uk) (check recipe below)
- sauté onion (and garlic) in olive oil or water, until soft and just starting to brown in a large frying pan - add in a splash of almond milk and the other ingredients and bring to a simmer
- add in the cooked pasta and stir, adding more almond milk if necessary ~> plate up!! i severs mine with peas, baked falafel ( @cauldronfoods ) and fresh tomato

easy simple homemade pesto!!!!
blend or put in a food processor: 2 packs (60g) fresh basil, 50g pine nuts, pinch salt, 1 clove garlic, 1/4-1/2 cup olive oil + water mix (start with less and add more until smooth, can opt for all oil or all water if preferred), optional: 1 tbsp lemon juice, 1/4 cup nutritional yeast

Do you guys like tofu? This is a bowl full of stir-fried sweet lime glazed tofu by @thefoodietakesflight

Ingredients
2 blocks extra firm tofu (around 240g each), sliced into cubes
1 heaping tbsp corn starch
1/2 tsp salt
1/2 cup bell pepper, sliced into squares
1 onion, sliced into squares
2 tbsp canola oil, for frying
Glaze:
3 1/2 tbsp maple syrup
2 tbsp soy sauce/liquid aminos
3 tbsp lime juice (I used calamansi juice)
1 tsp sriracha (optional)
2 cloves garlic, minced
1/2 tbsp corn starch, diluted in 1 tbsp water

Steps
1. Dry the tofu and cut into cubes. I wrap the tofu in towels and place a plate on top of it until excess liquid is absorbed by the towels.
2. Sprinkle the salt on the tofu cubes. Add the cornstarch. Coat the tofu well.
3. In a bowl, mix all the ingredients for the sauce except the cornstarch mixture.
4. In a pan, heat around 1 1/2 tbsp of oil and then fry the tofu cubes until crisp and golden. You may need to turn around the tofu cubes.
5. Take out the tofu and sauté the onions and bell peppers in a little oil. Add in the glaze ingredients except the corn starch + water.
6. Cook the sauce until it boils then lower hear before adding in the cornstarch mixture. Mix until thick.
7. Add in the tofu and cook until the sauce is well incorporated.
8. Serve with a bowl of rice or noodles and enjoy while hot!

@haloburgeruk invited us down to try their new summer special :: the smoky carolina bbq burger! a 1/4lb @beyondmeat patty, sticky sweet bbq sauce, smoked gouda cheeze, crispy ale battered onion strips and mayo ••• it was, incredible to say the least. halo burger, for us, has a super nostalgic taste that takes us back to being a wee young’n. when you take a bite of this, getting all those flavours in one ~ it truly is a mouthwatering experience.

MY TOP TIPS FOR DELICIOUS CREAMY, SMOOTH NICE CREAM
• get a high powdered blender or food processor (but it will work with almost any) i use a vitamix (i saved up for a year to get one but it was the best decision of my life!)
• use bananas that have just started to go brown and freeze them at least overnight (i use 2-3 v large ones)
• if you don’t like bananas, you can use frozen mango as your base
• if you want to bulk it out and sneak in extra veg, add steamed then frozen: cauliflower, courgette or pumpkin
• add as little liquid as you can! if you’re adding fruit that isn’t frozen, eg passion fruit, strawberries etc don’t add any other liquid !!
• keep going, scrape down the sides and keep blending, don’t give up and eat it with chunks in
• if you’re adding açai, it’s much easier to use the powder than trying to blend up a frozen block
• eat your greens by adding spinach or kale to it (will be a beaut colour as well)
• allll about the toppings !! my go to would be a mix of: granola, fruit, nut/seed butter, chocolate spread, nuts, coconut, cacao nibs/ choc chips, coconut/ soya yogurt, chickpea cookie dough -> in this bowl #deats : 2 large frozen banana, ~1tbsp cocoa powder, vanilla powder, tiiiiiny splash almond milk + strawberries, mango, apple, chocolate peanut butter, quinoa granola - i can’t lie i used to look at people who ate blended bananas for breakfast every day and juuuuudge then i mean but ever since i tried it i haven’t gone 3 days without having some, i literally always have frozen bananas in my freezer...
