Deets: 2 @sietefoods almond tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the spinach in the same pan while the tortillas were cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any cheese or your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so. Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons of @sietefoods chipotle sauce (or any hot sauce if your choice). •

Avocado Salsa Grilled Chicken ✨⠀

makes 4 servings ⠀
Ingredients:⠀
1/4 cup fresh lemon juice ⠀
1/4 cup raw honey ⠀
4 fresh cloves garlic, minced ⠀
2 Tbsp avocado oil, or olive oil ⠀
sea salt and pepper to your taste ⠀
4 boneless skinless chicken breasts (about 1.5 lbs.) 4 slices mozzarella, or swiss cheese (optional)⠀
1 large ripe avocado, diced ⠀
2 medium tomatoes, diced ⠀
a small handful of fresh chopped basil, or cilantro .⠀
Instructions:⠀
In a medium glass bowl whisk the honey, lemon juice, garlic, oil, sea salt and pepper. Add the chicken, combine and coat well.⠀
Marinate, refrigerated for about 30 minutes. ⠀
In a small bowl make the avocado salsa. Add in the diced avocado, tomato, basil and salt and pepper to taste. Set aside. ⠀
Heat the grill to medium high heat. Grill the chicken on each side for about 5-6 minutes or until cooked throughout and tender. ⠀
Immediately top with mozzarella cheese and salsa. Enjoy!⠀

_ Ingredients (for 4 pancakes)
4 cups flour, sifted
4 tablespoons baking powder
4 cups milk, warm to the touch
¾ cup butter, melted
3 egg yolks
4 egg whites
maple syrup, to serve .
Preparation
1. Whisk together the flour and baking powder in a large bowl.
2. In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.
3. In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.
4. Pour the milk mixture into the flour mixture and stir with rubber spatula until just combined. Add the beaten egg whites and gently fold to combine.
5. Heat an 8-inch (20cm) nonstick skillet over low heat. Pour 1 ½ cups of pancake batter into the skillet, smooth out the top, then cover with a lid. Cook until golden brown on the bottom and a toothpick inserted into the center comes out clean, about 20 minutes. Transfer the pancake to a plate and repeat, making 3 more pancakes with the remaining batter.
6. Serve with maple syrup.
7. Enjoy!

1 - Invest in tupperware & mason jars! You’ll be motivated to prep once you have the proper storage. (I use 16 oz mason jars for overnight oats & 32oz for salad jars. ⠀

2 - Buy some seasoning to switch up the flavor easier. @FitFlavorSpices are my current fav!⠀

3 - Write your grocery list before you grocery shop! I think in categories of: Veggies, Fruit, Protein, Health fats & Carbs.⠀

4 - Multi-task your food! If you have items cooking on the stove and in an instant pot, you’ll be done much faster!⠀
.⠀
5 - Don’t be afraid to start small! Small steps can add up to big results.⠀
.⠀
6 - Invest in some meal prep cooking tools. My current favorites are my Instant Pot, egg cooker and veggie spiralizer.⠀

What you need for the popsicles:
(makes 6 popsicles)
1 1/2 cups coconut water
1/2 cup blueberries
6-8 strawberries
Popsicle molds
.
What to do:
1- place around 6 blueberries at the bottom of the mold
2- add a few strawberry slices to the mold
2- add in the coconut water
3- place molds in the freezer for an hour
4- insert the popsicle sticks and continue to freeze until hardened
5- enjoy!

What you need for frozen yogurt bites:
1/2 - 3/4 cup yogurt
stevia, to taste
1/2 cup blueberries
1/4 cup raspberries
1/2 tsp vanilla extract (optional)
.
What to do:
1- In a bowl, combine the yogurt and stevia to taste (option to add vanilla extract here)
2- add a couple blueberries and raspberries to each mold of an ice tray
3- spoon the yogurt mixture into each mold until it is completely full
4- freeze for 5 hours or until frozen
.
