When violets make teal...the magic of herbs infused in water! Every time I make violet syrup - 'tis the season for it, so if you're wanting to DIY your own violet concoction this year, now's the time - I get a slightly different hue of purple to pink to blue to green. Exact color depends on violet species, time of harvest, extraction method, time, and temperature, and a whole lovely variety of other factors.
~
This particular batch turned into a honey syrup for herbal cocktails. Some of our violet medicine goes into our Wild Cherry Bark Syrup (a soothing, mucilaginous respiratory aid). Some goes into our simple Violet Extract. This year, some will be going into our beloved Breast Massage Oil.

"Another lawn bites the dust!" Pt 2 - Wildflowers for the Win! Seeding complete, irrigation is set, and soon new life will emerge.
Grass lawns are the most costly "crop" in North America. More money, time, and resources go into maintaining lawns than any other plant!
Here we are using lasagna gardening methods to transform an unhealthy, high-maintenance, lawn into a lush wildflower lawn, surrounded by low-maintenance edible landscape, including ferrocement veggie beds, fruit tree guilds, and edible ornamentals.
The wildflower lawn uses a fraction of the water, stays green longer than traditional grass, provides forage for bees and other pollinators, is soft on bare feet, and only needs to be mowed a handful of times per year. You can even harvest many of the flowers for tea, including clover and chamomile! A "lawn" can come in many forms, and if done right, can be a truly regenerative element in an edible ecosystem right at home!

As we climb out of winter, spring can be felt in the abundance of colours around us. Using herbal astrology can show how herbs harvested in May connect to different energetic elements of our body, spirit and soul.
Reflections between plants and planets refer to the general characteristics of the planet’s perceived archetype.
Herbal Alchemy is the art and science of planets, plants and people. Experience and learn the foundations of this ancient herbal knowledge, as well as plant preparations and medicine making, in our herbal workshops in France this summer. Link in bio for more info

Strawberry Fairy Soda
In previous posts, I have written about using local wild plants for their natural yeasts to use in fermentation.
I have been experimenting with new plants this Spring for their wild yeast content but continue to go back to my favorite: wild Spruce. In this recipe, I used fresh wild Spruce tips for their wild yeast content.
Fairy soda has so many possibilities that it is almost endless. Children love berries and the end result is nice and fizzy as well. You can experiment to come up with your own flavor profile.
Here is my super simple recipe for naturally fermented Strawberry Fairy Soda:
.-1/2 gallon Ball jar one third of the way with organic strawberries
. -2 handfuls of fresh wild Spruce tips & 1 long twig
.-3/4 cup organic raw honey or maple syrup
.-Enough Spring water to fill the jar 2 inches from the top
Instructions:
(Make sure your ball jar and lid are very clean, including any utensils you may use. Your hands and berries must be washed. The idea here is that no unwanted bacteria get into your ferment.) Do not wash the Spruce.
Add all ingredients and shake until the sweetener is visibly dissolved. Within 1 day or less, you should start to see some active fermentation bubbling. Ferment 2-5 days at room temperature, shake & open the lid a few times a day to "burp" the gases, and taste each day. A bad smell is usually an indication of spoilage, but if you have active rising bubbles and a good smell, you've generally got a good ferment. You can either strain and bottle to drink, or strain and let your soda continue to ferment a couple more days to become more bubbly.
*If you have trouble getting your ferment to become as bubbly as you'd like, you can first create a "yeast starter" by taking a pint ball jar, add your Spruce twigs to spring water, and add enough honey so that the water tastes sweet. Let this sit for 2-3 days until visibly fermented (bubbling) and then add 3/4 cup to your Fairy Soda. (For a very cool book with ideas on plants with wild yeast and many more recipes & techniques, check out "The Wildcrafting Brewer" by Pascal Bauder)
(P.S. Be sure to thank the Spruce )
