INGREDIENTS
1 tbsp. extra-virgin olive oil
1/4 onion, finely chopped
2 garlic cloves, minced
1/2 tsp. cumin
1/2 tsp. chili powder
1 1/2 c. shredded chicken
1/3 c. red enchilada sauce
2 tbsp. freshly chopped cilantro, plus more for garnish
Kosher salt
1 c. shredded cheddar
1 c. shredded monterey jack
Sour cream, for serving (optional)

DIRECTIONS
1. Preheat oven to 375° and line a small baking sheet with parchment paper. In a medium skillet over medium heat, heat oil. Add onion and cook until slightly soft, 3 minutes. Add garlic and spices and cook until fragrant, 1 to 2 minutes more. Add chicken and enchilada sauce, then bring mixture to a simmer. Stir in cilantro, season with salt, and remove from heat.
2. Make taquito shells: In a medium bowl, mix together cheeses. Divide mixture into 6 piles on prepared baking sheet. Bake 8 to 10 minutes, or until cheese is melted and slightly golden around the edges. Let cool 2 to 4 minutes, then add a small pile of chicken and roll tightly. Repeat until all taquitos are made.

It’s Tuesday! My favorite day because I get to see SO many incredible transformations since I’m doing NSV’s this week I thought it only fitting to include one of my biggest ones yet for transformation Tuesday. For the first time in my life I’m In a single digit size pants for some that may not be so significant but for a woman who has never been there before it was a huge victory for me. All this is because I never quit. When I wanted to just give up because the changes I had to make were just too hard or too overwhelming I kept going. I knew I was the only one in charge of my health and that I was the only one that could put the work in to make these necessary changes. And I freaking did it. I cried, I cursed, I stomped my feet on plenty occasions BUT I never quit on myself. That’s self love guys. Loving yourself enough to not throw in the towel this time. You can do it. It’s hard work and you’ll have bad days but you CAN and WILL get past them..

Stop telling yourself you can’t do this! That goes for me as well. I’ve been struggling this week with maintenance♀️ I’m not doing anything wrong but it’s just an unfamiliar territory and it’s causing more stress than I care to admit. I had to look at myself hard in the mirror this morning. I had to remember I’m a badass bitch who fought for this new body and nothing is going to keep me from staying in a place I’m so happy in right now. I just need to breath and give myself permission to fall and realize I’m not really failing at anything I’m just learning a new part of my journey. In other words I got myself out of my head. I had to tell myself to stop being so hard on myself and to stop expecting perfection. You can all do this. I can do this. WE CAN DO THIS!! The struggle never really ends we just learn to adapt and find ways to experience struggles in a HEALTHY way. No more wallowing for this chick! I’m heading into the rest of this week In warrior mode I got this! Never quit guys. Times will get tough and you’ll doubt yourself sometimes but never ever quit! Give yourself that pep talk and get right back to it

Cooking spray, for muffin tin
1 lb. ground beef
1/2 tsp. garlic powder
Kosher salt
Freshly ground black pepper
2 tbsp. cold butter, cut into 20 pieces
1/4 oz. (8-oz.) block cheddar cheese, cut into 20 pieces
Lettuce leaves, for serving
Thinly sliced tomatoes, for serving
Mustard, for serving

DIRECTIONS
1. Preheat oven to 375° and grease a mini muffin tin with cooking spray. In a medium bowl, season beef with garlic powder, salt, and pepper.
2. Press about 1 tablespoon of beef into the bottom of each muffin tin cup, completely covering the bottom. Place a piece of butter on top then press about 1 tablespoon of beef over butter to completely cover.
3. Place a piece of cheese on top of meat in each cup then press remaining beef over cheese to completely cover.
4. Bake until meat is cooked through, about 15 minutes. Let cool slightly.
5. Carefully, use a metal offset spatula to release each burger from the tin. Serve with lettuce leaves, tomatoes, and mustard.

Spicy Sriracha Cauli Bites For a movie nightPaired these with some salsa and it was the perfect amount of spicy
RECIPE:
1 head of cauliflower cut into florets
3 tbsp sriracha
1 tbsp maple syrup
1 tsp garlic
1 tbsp olive oil
3 tbsp of coconut aminos
Preheat oven to 450F, cut cauliflower into florets. Bake for 15 minutes, plain.
While it cooks, mix together all the ingredients in a bowl. Then coat the florets with the mixture and bake another 15 mins. Broil at the end for 30 seconds to make it a little crispy :)

INGREDIENTS
2 avocados
2 tbsp. butter, divided
4 large eggs
Kosher salt
Freshly ground black pepper
1/4 c. shredded cheddar
2 slices cooked bacon, crumbled
2 green onions, sliced

DIRECTIONS
Cut avocado in half and remove pit. Lay avocado halves on their sides and carefully cut lengthwise into 2 thick slices each. Hollow out middles with a paring knife.
In a large, nonstick skillet over medium-low heat, melt 1 tablespoon butter. Place avocado slices into skillet and crack an egg into the center. Season with salt and pepper.
Cover skillet and cook until egg is cooked to your desired doneness, about 5 minutes for a just runny egg. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted, a minute more.
Repeat with remaining ingredients. Garnish with bacon and green onions.
