// WORTH THE READ!! // So this burger right here makes me smile. It is the epitome of the direction we, as a kitchen, are aiming towards. Not only does it perfectly hit #umami by touching all aspects of #fatacidsaltheat, but it is an amazing confluence of #scratchkitchen and #farmtotable . Let’s break this down ... 1. Beef bacon Serrano jam ... over 6 months with this concept of beef bacon and I can finally say we have a product I can stand behind (my apologies to any guinea pigs that had tough, black, burnt pieces of beef jerky along the way). It now takes us at least a month to finish our bacon, and it is so worth the wait. Now we take that bacon and cook it down with Serrano, onion, sugar, and vinegar to create this jam that elevates sweet, heat, and salt with one bite. This alone is worth your visit.
2. Bone marrow blue cheese compound butter ... ok so let’s make an already fairly exquisite 10 oz. ground rib eye burger patty better by adding some velvety cheesy beef butter on top of it. Yes, we like beef with our beef. This compound butter has done wonders on our rib eye, and it is an undeniably necessary addition to this burger.
3. Blue cheese aioli ... because ... blue cheese aioli , need we say more?
4. Farm fresh arugula and red onion ... Let’s not forget, that on top of it all we are finishing with the bestest and the freshest produce being delivered directly from @black_sheep_farms2013 . We not only believe the veggies that don’t sit in warehouses make our dishes better, but we also believe in supporting local. Thank you Edgar and your family for providing us with your best!
There’s so much behind each and every dish that we put out. Stories of where we have been, and where we are going. Understandings that have grown with time and experience. I get excited over every dish, because whether it was my recipe or a recipe that was already in place when I got to the restaurant, i have seen it mature in the past few years, and that maturation is spilling out into the new dishes we are creating. // STORY TIME //
So heres the thing about this chicken and waffle dish on our new lunch menu ... we spent a lot of time perfecting every component so that every part of the dish could stand on its own. It’s a pretty common dish, so what would drive people to want OUR chicken and waffles ... 1. The maple butter cream ... we don’t serve ours with just maple syrup, we make a maple butter cream that is incredibly rich but incredibly balanced.
2. The Waffles (@lewaftheartisanwaffle) ... the recipe is from one of chef Tim’s original mentors in the food industry. Chef Tim and I ran into his friend and co-founder by accident at a food convention in LA and we are now using his original recipe on our lunch menu. It is really a great waffle with little sweet crunchy bites throughout. Thank you @lewaftheartisanwaffle !
3. The chicken ... our owner Gary Parkinson said, we couldn’t just have a decent fried chicken, we had to have the BEST fried chicken. This led to a venture of trial and error for quite some time. We thought we had everything we wanted, really good flavor in the flour, and really juicy, flavorful chicken. Then a suggestion comes (from someone who doesn’t speak up much) about adding one ingredient. It was like night and day the difference it made with the chicken to the point where we felt the we had the BEST fried chicken in the area.
4. The height ... standing at almost 6 inches, this stack combines all of these components to give you the best balanced bites of savory and sweet. It’s also really impressive watching it come to your table.
See a dish like this is not just my recipe, or chef Tim’s recipe. This dish is a @summithouseoc kitchen collaborative. It didn’t take a week, or a month, or even a couple months ... recipes like this are in the works for years, whether intentionally or not. We are really proud of it, and people have been commenting already how they agree with us. #teamworkmakesthedreamwork
