Deconstructed Cheeseburger Bowls and Firecracker Chicken
The cheeseburger bowls can be customized to your liking. I used 85/15 beef here but using a leaner beef or turkey can cut the caloric load by quite a bit. For the Firecracker Chicken I like to cut the chicken into thin slices so that it cooks faster and so that the surface area is increased to allow for more sauce to coat the meat. The sauce is the flavor in this meal so having the sauce spread out across more surface will lead to a more even distribution of flavor.
If you are good with a knife and know how to optimize your cooking strategy, each of these dishes could be completed in under 40 minutes and you could have 5 meals ready to go for your weekly lunches. One thing normies often say about meal prep is “yeah it’s cheaper but when you factor in the time it takes to make the food, it’s worth it just to eat out.”
Unless you’re someone who works every waking minute of your life and have zero downtime, this is a horrible excuse. Plus you have to go to the restaurant, wait for the food to be made, and then go back to your business. That all takes time too. If we conservatively say a meal prepped lunch cost $5 and a takeout lunch costs $10, you’d save $1,250 per year by prepping your lunches.
If you put that $1,250 in an index fund every year for 10 years at a 4% rate of return, you’d have almost $17,000. The financial benefits are even secondary to the health benefits you would receive by cooking all of your meals at home.

Let’s talk about meal prepping chicken and microwaves real quick. I use chicken thighs for 80% of my meal prepping because it works better than chicken breast. The reason for this is because of the fat content of the meat and how microwaves work. The way microwaves heat our food is through molecular friction from inside out. The microwave sends an electromagnetic wave into the box that holds your food.
Inside of your food is water molecules. Every water molecule is a combination of two hydrogen atoms and one oxygen atom. If you recall from chemistry class, there are polar and non polar molecules. Water is a polar molecule meaning that it has a separation of electric charge with one side being negatively charged and one being positive. The positive side of the molecule will try to align itself with the electric field of the wave as it propagates, causing it to rock back and forth, creating molecular friction and heating your food.
Chicken thighs have more fat which means more water and a more even heating which prevents the meat from drying out. Chicken breasts have much less fat and therefore water, so it’s harder to heat chicken breasts in the microwave.
The water that is in the meat will be excited and heat up the area surrounding it but eventually that water can escape out the surface of the meat and evaporate. When you hear popping this is what is likely happening. Moral of this story-Chicken thighs > breast for meal prep.
