Y o u n g P i n e C o n e | dry manzanilla sherry • candied pine cone liqueur • golden rum • citric acid • calvados . A real treat in late spring are the very young, tiny and soft cones of the pine (pinus sylvestris) in candied form. We simmer them gently in syrup for a couple of hours, which makes them even softer and infuses them with sweetness. A very aromatic snackable garnish.
