Be as free as the wind and you can be anywhere.

A last minute decision to take a detour to Aigues-Mortes while on our Southern France road-trip last year provided us with the biggest surprise of our trip. I had heard about the pink lagoon at Las Coloradas, Mexico; but I had no idea that France has its own pink marsh! Seen off in the distance from the incredibly well-preserved ramparts of this medieval Crusader city, the Salin d’Aigues-Mortes is a marsh that has been used for salt mining since the Stone Age (12,000 years ago). As the name Aigues-Mortes — meaning “dead waters” — illustrates, this marsh has a very high salinity. The pink color is naturally caused by a combination of the high salt content and a unique algae that lives in the water. And, unlike most pink lakes around the world, this one is actually home to many flamingos (who get their bright pink color from eating that algae). Salt mined from this region of France — called the Camargue — is what helps make the cuisine of Provence so flavorful. Today, a staggering 500,000 tons of salt are harvested and shipped around the world. Our brief detour didn’t leave us enough time to take the Petit Train, which is the only way to see the marsh and mining facilities up close, but we hope to return one day and take the tour.
