remember our attempts to cure our own olives? (we’ve got a single, heavy-cropper olive tree in our garden) .

well, we talked to local people and read a few books, as well as the dozens of very helpful comments and messages some of you sent me and the results are... mmm... well, let’s just say we’re going to try again next year. they’re not terrible but they’re not delicious either. .

however! luckily we made several different batches and there’s a clear winner! everyone in this region told us to add orange peel and we did — and it really works wonders!

here’s the recipe for the winning batch: after soaking the olives in cold water for a month (ideally changing out the water daily), rinse them and put them in a tall glass jar with a lid. now make the brine: boil some waning moon spring water — everyone here swears by gathering spring water when the moon is waning [quarto minguante] — with 10% coarse sea salt. after boiling for a bit, turn off the heat and add thyme, oregano, garlic and orange peel. once the brine is cool pour it over the olives. cover with olive oil. close the jar and wait for 6 months before eating. (we experimented with both boiled and un-boiled water and other ingredients like lemon slices, pepper corns, bay leaves... but the combination described above is our favourite!)

My new obsession is making herb butter we can all grow herbs this is so easy to grow and doesn’t require a lot of space. You can grow in pots or ground and when you grow something, preserving becomes a part of it. Chances are Quinces you either buy this weekend at Farmer’s Markets or in the shops have been sitting in storage since harvest time was weeks ago.
That’s ok, they store well if stored properly.
Two things:
1. Even if a recipe says cook whole, in our kitchen at this time of the year they get peeled & cored. Quinces can often start to go ‘off’ starting at the core.
2. If Quinces are picked late in the season after rain they tend to hold more moisture so those little bruises on the outside may be turning to a bigger bruise on the inside.

Strawberry season is still a little while off here in the Northeast, but there's something deep inside me that craves strawberries this time of year. Growing up in California, winter was the only time cold enough to grow these little beauties.
Even though our own wont be in for a while, I still got the chance to practice my strawberry canning technique with a few discount flats of berries from @traderjoes
They came out perfect! Beautiful in the jar, just sweet enough, and they hold their shape as whole berries through the canning process.
The trick is to dust them with just enough sugar that they release some of their juices, just enough to can them without added water. Then heat them just barely until they're warm, pack them in jars and can them, only cooking long enough to pasteurize the jars.
When our home grown berries come around in a few months, there's going to be plenty of whole canned strawberries filling my pantry.

What an incredible jackfruit harvest! And there were 3 of these wheelbarrow loads!
Thanks to our amazing year long apprentice team and @fedbyconnor we processed 100s of pounds of green jackfruit.
How did we manage to preserve this much food? Using those microbes through lacto fermentation ✨ By placing the processed fruit into a 2% of the total weight (fruit and water) salt brine, we are able to store this for months. This also makes it quick and easy for the kitchen to use in stir fry, tacos, lasagne, and so much more
