I’ve never had the occasion to try those street mangoes on a stick. You know. Those mangoes that are slashed & sprinkled with chili powder & salt. So I decided to work that concept into a salad! Coconut quinoa, black beans, sweet mangoes, creamy avocados, crunchy red peppers & cukes, tangy red onion, fresh cilantro in a sweet & spicy chili lime vinaigrette!

Get The Recipe
Whisk together:
1/2 cup fresh lime juice
1/2 cup maple syrup
1/4 tsp ancho chili powder
1/4 tsp smoky paprika
1 clove garlic, minced
Zest of 1 lime
Salt & pepper to taste.
~Cook 1 cup of @ancientharvest Harmony (tri-colored) quinoa in 2 cups of coconut water for 15 minutes. Let cool.
~To a large serving bowl add:
15 oz. black beans rinsed & drained
3 mangoes chopped (save 1 for topping the salad)
2 avocados chopped
1 red bell pepper chopped
1/2 English cuke seeded & chopped
1/2 small red onion chopped
1/2 cup chopped cilantro
Zest of 1 lime
Top with the cooled quinoa.
Pour the dressing on top & toss.
Top with chopped mangoes drizzled with lime juice & sprinkled with chili powder.
Enjoy!

There's no comparison when it comes to Homemade Ranch Dressing! It's so good I put it on everything! The fact that it's so low in carbs makes it a MUST MAKE on any low carb diet. ⠀

Ingredients:⠀
1 cup mayonnaise⠀
1/3 cup sour cream⠀
1/2 cup Ripple Pea Milk @milkripple or heavy cream, half & half or you fav low/no carb milk substitute⠀
1.5 teaspoon dried dill weed⠀
2 teaspoon dried parsley⠀
2 teaspoon dried chives⠀
1 teaspoon onion powder⠀
1 teaspoon garlic powder⠀
1/4 teaspoon fine sea salt⠀
1/4 teaspoon finely cracked pepper⠀
3 teaspoons white vinegar⠀
⠀
Instructions:⠀
1. In a small container add milk and all of the spices, mix well and allow to mingle while preparing the other ingredients.⠀
2. In a medium-sized bowl mix the mayonnaise and sour cream. ⠀
3. Add milk spice mixture and whisk until smooth. ⠀
4. Add the vinegar and whisk once more. ⠀
5. Pour into a jar and chill in the refrigerator until ready to serve. This dressing will keep nicely in the refrigerator for up to a week. Enjoy! ⠀

Summer weathers here and it’s got me craving all the salads! Anyone else like to make their own homemade salad dressings? This spicy cashew dressing was seriously bomb so I thought I’d share. Super easy to make, so much healthier than most conventional bottled brands and so worth a try!

Great for meal planning, I make a big batch and use it for a couple of days. Makes a great veggie dip too! .

Spicy Tomato Cashew Dressing
1 c. Soaked raw cashews
1 c. Grape tomatoes
Juice of 1 lime
2 tbsp coconut aminos
2 cloves garlic
1/2 tsp smoked paprika
1/2 tsp Himalayan pink salt
Small dash cayenne pepper

Put all ingredients in high speed blender on high until smooth, serve and enjoy! I highly recommend using organic ingredients if possible.

Get The Recipe
1 medium red onion thinly sliced on a mandolin
1 cup rice vinegar
3 TBSP sugar
1/2 tsp salt
1 tsp mixed peppercorns
1 tsp juniper berries
2-3 sprigs fresh thyme ~Heat the vinegar & sugar over medium heat in a small saucepan until sugar dissolves.
~Remove from heat, add the salt & cool slightly.
~Place onions in a glass storage container.
~Sprinkle peppercorns & juniper berries throughout the onions.
~Pour vinegar over the onions.
~Add thyme sprigs.
~When cool, cover & refrigerate at least 24 hours. Enjoy!

No after dinner farts AND as close as I’ll get to playing The Price is Right. Made over some store-bought salad dressings on The Morning Show with the help of a stellar recipe creator @foodlovescompany . I’ll post his creations on the site soon, but below is the recipe for an EASY Honey Mustard Dressing my mom taught me way back when❤️ that only requires a mason jar shake.

1/2 cup olive oil
1/4 cup Apple Cider Vinegar
2 tbsp. Dijon Mustard
1 tbsp. Honey (or fibre syrup)
Salt and Pepper to taste

Put all ingredients in a mason jar, and shake it all about.

And just like that - you’ve got yourself a dressing that actually adds VALUE to your salad, instead of taking value away like many crappy store-bought ones. ♂️ It’s the lil’ things that make a huge difference.

which salad dressing should you be consuming?
At restaurants, we’ll often hear the server mention a “light option”, which usually is followed by the words “sugar free” or “fat free”. In my opinion, salad dressing should always have a healthy source of fat in there. Healthy fats are full fat- period, not low fat or fat free. If it’s a cream based dressing (caesar, ranch), it naturally will be high in fat. This means that salad dressings are also going to be high in calories, and those are the calories you want to be consuming. When something is “low fat, sugar free, calorie free”, it typically means that there is an artificial agent in there to upscale the flavour of what they just took out.
When looking for salad dressings, check the back of the bottle for the ingredients. If you don’t know what the ingredient actually looks like on it’s own, it most likely could be artificial. If you can’t pronounce it, it most likely is also artificial.
Low fat, sugar free dressings will also make your body crave more sugar. You will notice that you are hungrier much quicker than if you chose a full fat, oil based salad dressing. The healthy fat in a salad dressing is crucial in my opinion when it comes to balancing your blood sugar levels.
Another easy way to distinguish if the dressing is healthy or not, is by noticing if it sits in the fridge or the shelf in the grocery store. When salad dressing is stored on the shelf, this typically means that there is an artificial preservative helping to keep it “alive” and allowing it to emulsify. Completely natural salad dressings will not emulsify ( @motherraw (my fave) ). If I am out for dinner, I will literally ask for olive oil, and sometimes balsamic vinegar. I add my own salt and pepper, and that’s pretty much all I need. Salad dressing from the grocery shelf or restaurant give me the most uncomfortable cramps, most likely due to the unknown ingredients in the dressing.

Chickpeas are so versatile, especially in salads. But in the spring & summer I like to keep them light & fresh! So my lunch today was this Citrus Chickpea Salad with Blueberries, Oranges, Avocado & Fennel! Sometimes I serve this in lettuce cups. Today I ate it on top of toasted mini naan rounds schmeered with smashed avocado!

15 oz chickpeas, rinsed, drained, patted dry
1 cup jumbo blueberries
1 cara cara orange (or your favorite citrus) cut into small chunks
1 avocado cut into small chunks
1/2 small fennel shaved thin
Chopped fresh tarragon & fennel fronds
Whisk the zest of the orange with 2-3 TBSP fresh lemon juice, 2 TBSP olive oil, 1 tsp chopped fresh tarragon, 1 tsp chopped fennel fronds, salt & pepper to taste. Enjoy!
