【Recipe】Uji Matcha or Blue Pea Roti Sisir for you? Modified my straight dough Roti Sisir recipe shared earlier on, experimented & Super happy with the result! This time the bread turned out even softer than before! (swipe left to watch video, bread is so soft and fluffy that I can even tear it apart with one hand!)

Here’s my modified recipe for making a plain Roti Sisir, an old fashioned Indonesian bread. If making Uji Matcha or Blue Pea bread, see notes below recipe. .

【Roti Sisir Straight Dough Method by Baking Taitai】
Ingredients: (makes one loaf, using pan size 24x13.5x6.5cm ).

230g blue jacket bread flour
20g blue jacket cake flour
30g caster sugar
25g milk powder
1 tsp instant dry yeast
1 egg yolk
135ml cold fresh milk
30g unsalted butter
1/2tsp salt

Methods :
1.Mix all ingredients (except butter & salt) well together and knead till dough is elastic & smooth.
2.Add in butter and salt. Knead the mixture until window pane stage.
3.Cover and proof in a well greased container for 40 minutes or more until double in size.
4.Grease hands well as dough will be sticky. Deflate the dough. Divide equally into 12 pieces doughs and shaped round. Bench rest for 10mins.
5.Flatten each dough, roll into an oval shape making the ends slightly thinner than the centre. Fold half into a semi-circle, press lightly to seal. Place the semicircle side at the bottom of the greased loaf pan. Repeat until complete. Work fast to avoid the earlier placed doughs proofing faster than the last ones in.
6. When done, cling wrap the loaf pan and proof for another 40 mins or until double in size.
7. Brush the surface with some milk or egg mixture before baking in preheated oven at 190C for about 15 minutes or until surface is golden brown.
8. Remove from oven, unmould and transfer to cool on wiring rack.

✏️Note 1: To make Matcha Roti Sisir, I reduced the milk powder to 15g, and added 10g Uji Matcha.

✏️Note 2: To make Blue Pea Roti Sisir, boil 10g-15g of dried blue pea flowers without calyx with 230g water for 5 mins, strain and measure out 135ml, chill in fridge before use. The blue pea water will replace the cold fresh milk in the above recipe.
