#protiptuesday: • How to sharpen a serrated blade • Serrated knives are good for food with a crust, as a series of saw teeth provide an aggressive bite that keeps the knife from slipping on a hard crust. One of the reasons is that a higher pressure is crated at the tips of the serrations, which breaks the crust. The teeth are there to protect the insides of the serrations so they don’t contact hard surfaces. When the teeth wear down, the serrations start to dull. Then it’s time for sharpening. Serrated knives are ground only on one side and the back is usually flat. If your serrated knife feels dull, the best way is to use a fine-grain diamond file. Treat every single wave of the blade with the file using uniform draws. Try to make straight draws and only apply pressure during pushing and not while drawing back. If done correctly we can see a burr creating on the backside over the entire edge length. Remove the burr on a leather strop. Did sort of a repair job on this wide bevel Hinderer XM18. The heel portion of the knife was sharpened at 16 degrees per side (extreme wide bevel) while from the middle to the tip, it still had its factory edge.
