✨Broccoli Fritters✨ Exposure is a key component to getting our kids to accept and eat different vegetables but sometimes steaming, boiling or roasting just doesn’t cut it. We often need to try a little harder. We can add a dip, a sauce, make nuggets, muffins or mix them with a batter in irresistible fritters! The vegetables are still in plain sight but they are just made more appealing to children. Although it may not be considered as healthy, it is still exposure and if our children can enjoy broccoli this way, they are much more likely to be accepting of it cooked a different way. 4 Ingredient Chocolate Cookies These delicious little oat cookies are so easy to make and a perfect for toddlers and young kids. You only need 4 very simple ingredients and they can be made gluten and dairy free! Ingredients: - 1 medium banana - 60ml / 0.25 cup orange juice - 100g / 1 cup rolled oats - 8 chocolate buttons ( can use dairy free ) Directions: 1. Mash the banana and mix it together with the orange juice and oats in a bowl. 2. Shape the mixture into 8 cookie shapes and place on a lined baking tray. 3. Press one chocolate button into the middle of each cookie and bake for 10 mins!

Strange I know - but there’s hummus involved, so I’m all for it!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I have been serving these sweetcorn and spinach fritters to Nina ever since she was 6 months old. Packed full of veg, and so delicious from the corn sweetness. They take just 15 minutes to make and can be kept in the fridge for a couple of days or frozen for up to 6 months. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Do you often freeze left over food, or do you tend to eat your left overs the next day? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients - For the fritters; ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 200g of tinned sweetcorn, drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 100g of wilted spinach, I used frozen which I defrosted in the microwave (squeeze out some of the moisture before adding to the blender pot) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 100g of self- raising flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 medium eggs (you can sub for flax eggs to make this dish #vegan - 2 tablespoons of ground flax seeds and 5 tablespoons of water) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 60ml of milk (any milk will work) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 teaspoon of baking powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the hummus; ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • A 400g tin of chickpeas, drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 clove of garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 teaspoons of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • The juice of one lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • Good grinding of black pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 tablespoon of tahini ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • (add a little dash of water to the mix if you prefer a looser consistency) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Check out the video for the super simple and easy method! ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Both recipes are suitable from 6 months. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ❄️ The fritters freeze really well for up to 6 months. Ready in just 10 minutes, this super simple recipe is nutritious, delicious, and full of nature!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Served in our eco friendly, sustainable and earth loving @bamboo_bamboo.uk plates and bowls. Each natural plate we buy and use means one less plastic plate being manufactured and ending up in landfill, and it helps that Nina loves the super cute designs too! (Not an ad) ⠀⠀⠀⠀⠀ You can also buy these gorgeous plates through my amazon store (see highlights) I’d love to hear what little steps you have been doing to reduce your plastic waste? ——————————— Ingredients; (Serves 3) ⠀⠀⠀⠀⠀⠀ • 1 tin of chickpeas ⠀⠀⠀⠀ • 3 large handfuls of spinach ⠀⠀⠀⠀ • 1 teaspoon of ground cumin ⠀⠀⠀⠀⠀⠀⠀⠀ • Half teasooon ground coriander ⠀⠀⠀⠀⠀ • 1.5 teaspoons of smoked paprika ⠀⠀⠀⠀ • 250g of dried pasta ⠀⠀⠀⠀⠀ • 40g of cheese (can use #vegan cheese or leave out) ——————————— Method; ⠀⠀⠀⠀⠀ 1) Put your pasta on to boil. ⠀⠀⠀⠀⠀ 2) In a separate frying pan add a drained tin of chickpeas, a drizzle of ground nut oil, and all of the spices. Cook on a low heat for a couple of minutes. ⠀⠀⠀⠀⠀⠀ 3) Add a ladle full of the pasta cooking water to the chickpeas, stir and add the spinach. Keep stirring occasionally till the spinach has wilted. ⠀⠀⠀⠀ 4) Add the grated cheese and your cooked pasta to the chickpeas and keep tossing till all combined.
