Avocado, Banana & Apple Baby Muffins . Delicious oat muffins with no added sugar or honey; sweetened naturally with banana, avocado and apple sauce! Great for baby led weaning and older kids too! . INGREDIENTS * 150g / 1 cup plain or all purpose flour * 100g / 1 cup rolled oats * 1 tsp baking powder * 1/4 tsp baking soda * 1 medium banana * 1 medium avocado * 200g / 1 cup apple sauce * 1 egg * 60ml / 1/4 cup milk . INSTRUCTIONS 1. Preheat the oven to 180c / 350f and line a muffin tray with 10 paper cases. 2. Add the flour, oats, baking powder and baking soda to a large bowl and mix with a spoon. 3. In another bowl mash the banana and avocado together and then mix in the apple sauce. Add the egg and milk and mix well. 4. Add the wet ingredients to the dry ingredients and mix just enough until all the ingredients have combined. 5. Divide the mixture between the paper cases and bake in the oven for 25 minutes. 6. Allow the muffins to cool completely before removing the paper cases. This helps to prevent them from sticking. 7. Store in the fridge for up to 5 days or freeze and leave to defrost for a few hours at room temperature.

it's #nationaldoughnutday and to celebrate, I'm sharing the recipe for my Spinach and Oat Banana Donuts (see below ) which you've probably seen me make a zillion times for Luca over on @inspiralizedkids (usually as muffins.) the truth is, is that every time I make a batch of these for his breakfast, I secretly hope Luca doesn't eat all 6 of them (which, 90% of the time, he does!), so that I can have them as a snack later in the day they literally take 25-30 minutes to make from start to finish and require just a blender and an oven, so cleanup is minimal you can find the recipe on my blog or below - and these work well with any leftover veggie you have, Luca had them with beets this morning, but also loves them with carrots and butternut squash. if you struggle with getting your little ones to eat veggies, MAKE THESE! . . Spinach and Oat Banana Donuts Makes 6-7 . Ingredients . 1.5 packed cups baby spinach 1 ripe banana 2 large eggs 3 tablespoons rolled oats 1/4-1/2 teaspoon of cinnamon 1 tablespoon ground flaxseed . Directions . P​reheat the oven to 350 degrees. Grease a regular donut tin. ​.​ Add all of the ingredients into a blender and process until smooth. Banana & Orange Toddler Bites Make these delicious and healthy snacks for kids with just three simple ingredients. Great for toddlers and weaning babies with a few teeth! . INGREDIENTS * 1 ripe banana * 40ml / 1/4 cup orange juice * 75g / 1 cup rolled oats . INSTRUCTIONS 1. Preheat the oven to 170c / 340f and line a baking tray with parchment paper or a non stick silicone sheet. 2. Mash the banana in a bowl with a fork. Add the orange juice and mix well. Then add the oats and mix together until everything is well combined. 3. Take one tablespoon of the oat mixture, shape into a round cookie shape and place on the baking tray. Repeat with the remainder of the mixture. I made 11 bites from this. 4. Bake in the oven for 10 minutes. Allow to cool on a wire rack. .

Dinner last night: ⏺ Roasted paprika sweet potatoes ⏺ Steamed green beans with lemon juice ⏺ Crispy broiled salmon He didn’t touch the green beans (only to feed them to me ) and he ate all the sweet potatoes and about half the salmon. He didn’t touch the salmon, but then I made little sandwiches with a flake of salmon mushed together with the sweet potato and he gobbled it up! Broccoli & Cheese Frittata Fingers These tasty little eggy fingers are perfect for baby led weaning and great for toddlers too. They are super soft so your baby won’t need any teeth to tuck into these They’ll also keep in the fridge for 2 days so brilliant for making in bulk! . INGREDIENTS * 1/2 tbsp oil * 75g / 1 cup grated courgette / zucchini * 50g / 1 cup chopped broccoli * 3 medium eggs * 25g / 1/2 cup grated cheddar cheese * 1 tbsp plain flour (can use gluten free or normal) * 1/2 tsp dried mixed herbs or oregano . INSTRUCTIONS 1. Preheat to oven 180c / 350f. Grease and line a baking dish with parchment paper. I used a 8in / 20cm square dish. 2. Heat the oil in a frying pan. Add the courgette and broccoli and fry lightly for 3-4 minutes until the vegetables are soft. 3. In a bowl mix the eggs, cheese, flour and herbs together. Add the cooked vegetables and mix until well combined. 4. Pour this mixture into the lined dish and bake in the oven for 15 minutes. 5. Remove from the oven and allow the frittata to cool before cutting into fingers or squares.
