recipe dEATS
1 large carrot, grated
1/4 cup chopped walnuts
1/3 cup raisins or dried cranberries (i added both!) wet:
3 flax eggs (can sub regular eggs )
1 cup mashed sweet potato
1/4 cup melted coconut oil or ghee
dry:
1/2 cup almond flour
1/4 cup coconut flour
1/3 cup @swervesweetie erythritol (or sweetener of choice)
1 1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg or pumpkin spice
icing dEATS
1/2 cup @nutiva coconut manna
1/4 cup @swervesweetie erythritol (or sweetener of choice)
grated carrots for topping (optional, but necessary ) preheat oven to 350F. starting with the batter, mix all of the dry ingredients together with a mixer. next add the wet ingredients, including the flax eggs, and combine. fold in the raisins, walnuts, and grated carrots. press the batter into a baking dish and cook for 20-30 mins. let the finished product sit in the refrigerator for 15-20 mins to completely cool before icing. once this is done, melt the coconut butter, add your sweetener of choice, and mix to combine...as easy as that! top with some extra grated carrot for some added, festive color

It’s important to mix up your diet and introduce different types of greens into it. Mainly because you won’t get bored, but also a great way to get different nutrients into your body. Next time you’re in an Asian grocery store, try these out. They’re some of my favorites! What’s your favorite Asian vegetable?
1. Napa Cabbage - Rich in antioxidants. The flavonoid content and large amounts of vitamin A and C. This is used to make kim chi. Can be eaten raw or cooked. It adds a hint of sweetness when you put them into stews or soups. Great base to make a slaw with!
2. Okra - Contains potassium, Vitamin B, vitamin C, folic acid and calcium. Originated from Africa but used in a lot of Asian cooking. I love eating this lightly steamed or in soups! The insides have seeds and is a bit slimy.
3. Bok Choy - vitamin C, vitamin E, and beta-carotene. I love to steam or stir fry them with garlic and ginger.
4. Chive Flowers - Contains Vitamin A, K and lots of antioxidants. It is quite garlicky in taste. Love to add this to egg cups and in stir frys.
5. Watercress - high in Vitamin K, high in antioxidants, and vitamin C. This is great steamed or even added to your noddle soup dishes!
6. Chinese celery - tastes just like regular celery except it’s got a lot more leaves! High in fiber which helps with digestion and has anti inflammatory properties. I use this is soups, stir frys, and in turkey patties!

Try this Kale & White Bean Soup
Ingredients
· 2 tbsp olive oil
· 1 small onion chopped
· 2 cans cannellini beans, drained & rinsed
· 4 cups vegetable broth
· 2 cups water
· 2 cups kale stems removed & torn into 1” pieces
· Salt & freshly ground black pepper
Instructions
1. In a medium saucepan over medium high heat, add the olive oil & onions & cook until translucent.
2. While the onions are cooking, mash one can of the beans in a small bowl.
3. Add the mashed beans, broth & water & bring to a boil.
4. Season with salt & pepper, add the whole white beans & kale, reduce the heat, partially cover & simmer for 20 mins.

Liquid Gold!!! I completely believe in 'You are what you eat'! .Cooking fats are a critical element of any dish. I try and use ghee, cold pressed oils in my cooking.
I grew up in solapur and I have memories of going to the 'Ghani', an oil mill and getting freshly extracted Safflower and Peanut oil. I have tried to maintain that and cook with cold pressed oils.
I visited the same oil mill when I was there last month, was so happy that it has still survived.
Safflower oil has high levels of monosaturated fats, even at level better than Oilve oil, it's a great cooking fat.
Why is cold pressed and unfiltered better than the alternative? . No heat means antioxidants are preserved
. No heat means vitamins and fatty acids stay intact .No filters means no artificial solvents And all that artificial stuff
The oil looks like liquid gold and the left over fibre is like a cake and fed to the cows and buffalos on the farms.
Our old ways have some rhyme and reason and it's about time we respect those.
I make an effort to choose organic, local and seasonal ingredients for me and the family.
So I chose cold pressed, unprocessed and unfiltered oils.
