Long post here... Spent the afternoon diagnosing water problems. A roasted Dong Ding that I previously enjoyed so much had a bit of sharp metallic finish that I hadn't noticed before. Hmm. Moving onto a medium roasted rougui, the unpleasant finish was in even sharper relief against the backdrop. @ukissme and I reached for another yancha we both knew very well, Beijing-stored, to confirm it wasn't the long flight messing with my teas. Sure enough, that hard-to-wash-off sharp metallic finish. At this point we were suspecting the water, but also our palate being thrown off by previous night's exertions tasting through gushu pu into the wee hours... The TDS meter was reading 25 ppm. That's hardly high, in fact would be considered low-ish, but something about the mineral content of the water was off. What we were experiencing would be consistent with an otherwise soft water high in magnesium. A call to the supplier confirmed it. They had delivered a water different from what was ordered, and a bit of frustrated lecturing on the phone later, replacement showed up within 15m. With the new water the teas were finishing a lot cleaner, but by this point not only were they tainted but our palate definitely affected by the unwanted minerality. Ah well, 15g of very fine teas, down the drain. 70/100 About 99% of your tea is water so shouldn’t you consider the quality of water for brewing? There are many discussions about the best kind of water for tea out there with some of them quite scientific. Ancient scriptures about water for tea particularly that of Lu Yu, respected Sage of Tea, recommend using water from a mountain stream, preferably from the same origins of the tea plant. Dragon well or Longjing tea produced in the Longjing Village in Hangzhou, Zhejiang Province, China is one example and even up to this day, people make a pilgrimage to get to the revered water source for a memorable Gongfu session. Most of us however do not have access to such spring water and so an alternative is more feasible. Generally, you don’t want to use hard water as it contains minerals that will affect the delicate taste and aromatics of the tea. Therefore, filtering is advisable. The pH level is also one thing to consider. Ideally, neutral water with pH levels between 7 to 8.5 is good. Higher levels would brew bitter tea, while too soft water would result to a flat-tasting tea. Oxygen is another debatable component in tea brewing and it is believed that boiling water twice produces more, some say less oxygen in water, which affects the flavors. This is likely a myth and a more substantial scientific basis is still required so I’m not going to elaborate. Long story short, since water plays a HUGE part in having the best cup of tea, one must consider carefully its quality. Personally, I prefer using bottled water with pH 8 level for delicate teas like green, white, yellow and matcha and normal Johannesburg tap water for black, oolong and Pu-Ehr teas. If there is any difference in taste, it would be subtle unless the water has very strong mineral or chlorine taste to it. Precious cargo from my time in Torino: bottles of Italian water from @giangiair, packed tightly in my heavy suitcase with lots of gratitude. It might sound a little over the top, but I almost cried when I tasted the tea that Gio brewed with his favorite Italian waters. I've spent years trying to achieve a good water for tea here in Las Vegas, where our local water is atrocious for tea. The beauty of Northern Italy's water was a revelation. I was stoked to share this magic at yesterday's Tea and Water Quality workshop, where we brewed teas with this Valmora water and 7 other waters. It was like we were tasting a totally different tea each time. So damn nerdy, and so damn fun. (Check out my stories in a bit, for pics.) Water matters for tea, y'all.
